I have really been into easy and healthy salads this winter and spring. Please bear with me while I am on this journey (I will post different type of salads in summer.) Besides, here is another appearance of Daisy, and who can resist of her cuteness (even if it is another carrot salad)?
Carrot Salad with Caraway Seeds and Dill
But joking aside, this Carrot Salad with Caraway Seeds and Dill is quite different from a classic carrot salad. The main difference make the caraway seeds. They have a prominent flavour – nutty, bittersweet, fresh, and somewhat with anise and citrus notes. It pairs well with dill. However, since the flavour of caraway seeds is quite bold and strong, you may want to adjust the amount to your liking.
Those bold flavours of caraway seeds and dill are nicely balanced out with the addition of raisins, honey, and apple cider vinegar. They also add subtle sweetness.
This salad makes a great side dish. But grab some bread (preferably rye such as Pumpernickel), and you will have a perfect light lunch or dinner, too!

Carrot Salad with Caraway Seeds and Dill

hoursThis Carrot Salad with Caraway Seeds is savoury and subtly sweet, herbal, and with a hint of citrus and anise coming from the caraway seeds.
Ingredients
- Carrot Salad:
6 cups shredded carrots (5-6 medium carrots)
1/3 cup raisins
1/3 cup chopped dill
- Dressing:
1 to 1 and 1/2 tsp. caraway seeds (to taste)
2 tbsp. olive oil
1 tbsp. honey
1 tbsp. Dijon mustard
1/2 to 1 tbsp. apple cider vinegar
salt and pepper, to taste
Directions
- For the dressing, first lightly toast the caraway seeds onto a small pan, 2-3 minutes, until fragrant. Then slightly crush them using mortar and pestle – or simply mince with a knife.
- In a small bowl, combine the caraway seeds with the the remaining ingredients for the dressing, whisk well. Let the mixture stand for 5 minutes to allow the flavours to meld together.)
- In a large bowl, combine the carrots, raisins, dill, and dressing. Try and adjust the taste if necessary – you may need a touch of salt or /and black pepper.
- You can serve this salad immediately, but it will be only better if you cover and refrigerate it for an hour or even longer. (It will be only better the next day.)Â Enjoy!
