Hello folks! How are you doing? I hope this week has been treating you well.
Also, can you believe August will be over in less than ten days? Even more, can you believe the summer is gradually coming to an end? Shall I continue? Can you imagine that Christmas is in about four months? lol. Well, as a matter of fact, some Christmas ideas have started appearing in my head – and I even have created a note on my phone, just to keep them in mind. No worries though – I am not rushing or planning (I have not started thinking about apple or pumpkin season yet). It is just a common food bloggers’ thing when you start thinking, often unconsciously, about new season(s).

Lavender Lemon Honey Butter
This Lavender Lemon Honey Butter is so luscious, fresh, and tasty – it is almost like a dessert type of compound butter. Do you like its glossy look? It happens due to two reasons. First and foremost, the addition of honey makes it silky and shiny (and more spreadable.) Also, instead of softening the butter at room temperature, I used the microwave to accelerate the process, and I believe it also contributed. You do not need to use microwave, though – just make sure you remove the butter from the fridge one hour or so prior to making this recipe.
It’s pleasantly sweet and savoury with a nice botanical flavour and freshness coming from lemon zest.

minutesThis Lavender lemon Honey Butter is easy to make with just a few available ingredients. It is dangerously tasty and flavourful and also inexpensive. If you like compound butter, I would encourage you to try this gourmet variation.
Ingredients
1/2 cup unsalted butter, softened (1 stick or about 115 gr.); can also use salted
1/2 tsp. or more dried lavender buds, minced. If using fresh lavender flowers, you may want to use more as fresh flowers are not as potent as d4ried.
1 tsp. lemon zest
2 tbsp. honey of your choice
a little pinch of salt if using unsalted butter
more lemon zest and fresh lavender flowers for garnish, optional
Directions
- Soften the butter by leaving it at room temperature about 60-90 minutes before proceeding, until it’s pliable. Alternatively, you can soften it in the microwave in 2-3 short intervals (about 10 seconds each.)
- If using the unsalted butter, stir in the salt along with the honey, lavender, and lemon zest. Mix well to distribute evenly. Try and adjust the flavourings, if needed.
- Transfer to a small bowl or container and let it firm – either at room temperature for about 30 minutes or in the fridge for about 10-15 minutes. You can also shape it into a log. Use the butter for bread, grilled food, or as a part of savory recipe that uses butter. When refrigerated, it firms up a lot, so I would recommend taking it out the fridge 20-30 minutes prior to serving. Enjoy!

Compound butters are always so much fun! This version is great for summer. As you mentioned, it’s on the sweeter side, so I’m thinking this might be fun with a toasted piece of bread or maybe even in a shortbread cookie recipe??
