Hello folks! How are you doing? Are you excited about the weekend? Are you enjoying this summer so far? Oh wait…what? How is that possible that it is August already?! Shocking, right?
And to celebrate both beginning of August and weekend, we should enjoy a tasty cocktail.
This Limoncello Honey Mojito, to be precise. Isn’t it sound exiting?
Normally, alcohol and heat are not good friends at all. But since a mojito is a relatively light cocktail, we can enjoy it. Please be mindful, however, that if you don’t deal with heat well or have any health concerns (including but not limited to heart and blood pressure conditions), you should probably avoid an alcoholic beverage.
Limoncello Honey Mojito
This cocktail is a perfectly luscious and refreshing twist on a classic version. Here limes are swapped for Limoncello and lemon juice. And honey is used in place of sugar or simple syrup. While it may sound very sweet, the flavours of this drink are nicely balanced and not overly sweet.
To make it, you will need white rum, Limoncello, honey, fresh lemon juice, and fresh mint. Plus, a handful of ice and sparkling water or club soda (optional.)

Limoncello Honey Mojito

minutesThis Limoncello Honey Mojito is a luscious and refreshing summer cocktail. It combines the sweetness of honey and limoncello, acidity of lemons, and freshness of mint.
Ingredients
2 oz. white rum
1 oz. Limoncello
1/2 to 2/3 oz. or more fresh lemon juice
1/2 tbsp. (7.5 ml.) honey
10 large mint leaves
ice cubes, crushed
mint and lemon wedges, for garnish
club soda or sparkling to top, optional
Directions
- Muddle mint leaves with honey and lemon juice in a shaker.
- Add the rum, limoncello, and crushed ice to the shaker and vigorously shake for about 30 seconds. Try and adjust the sweetness, by adding more lemon juice, if necessary.
- Pour into glasses and add some club soda or sparkling water if desired. Garnish and enjoy!
