I’ve got a nasty cold this week (feeling much better now but have not fully recovered yet.) So I am going to keep it short and simple this time.
Any celery lovers here? I have quite complicated relationships with celery. I cannot say I hate it, but it is not the produce you can find in our fridge often, either. Also, I am not a huge fan of celery in soups or other main dishes where it is cooked. On the other hand, I love its freshness and crunchiness when added in a salad. Just like in this Chicken Celery Grape Salad or Chicken Celery Prune Walnut Salad.
Celery Raisin Salad
This Celery Raisin Salad is super easy, healthy, juicy, and fresh, too. The addition of raisins adds a subtle sweetness while the yogurt dressing adds some protein.
It is very light, so serve it with a protein of your choice. Alternately, if you have any leftover chicken, shred it and add to the salad to make it more filling – and that could be already a light lunch or dinner. The addition of toasted nuts like walnuts or almonds would also be nice.
And if you are not fan of raisins, think of other substitutions such as dried apricots, prunes, currants – or maybe even a chopped apple or pear.

Ingredients
4-5 celery stalks, roughly chopped (about 200 gr. or 2 cups)
1/4 cup (50 gr.) raisins
1/4 cup (5 gr.) parsley, chopped
1 tsp. fresh thyme
salt and pepper, to taste
1/4 cup (65 gr.) plain yogurt, preferably Greek
1 tbsp. (15 gr.) light mayonnaise
a small handful of toasted and chopped walnuts or other nuts
Directions
- Simply combine the chopped celery, raisins, and herbs in a medium bowl. Season with the salt and pepper to taste. Dress with the combination of yogurt and mayo and mix to combine. You can serve it right away or chill for about 30 minutes. Serve it with chicken or other protein of your choice to make it more nutritious and filling. You can also sprinkle the salad with some toasted chopped nuts like walnuts or almonds. Enjoy!

I like celery well enough and certainly added to salads. This recipe is different but I think I would really love it with the raisins and walnuts. Speedy recovery!
