Hey folks! How are you doing? Are you ready for the weekend? (I know, this is such a silly question.) I hope you are enjoying the spring weather.

Sorry for bringing this up again, but Atlantic provinces are expecting more snow later this week. Yeah, typical end-of-March weather. But it looks like Halifax will be quite lucky this time, as they promise between 5 and 10 centimeters of snow. Some of the New Brunswick, Prince Edward Island, and Newfoundland & Labrador areas could see up too 25 centimeters of snows! Regardless of the relatively small amount of snow for us, Daisy will be so annoyed (as she has been in the “spring = outside mood!” lately.)

Anyway, today I am with something super tasty but ridiculously easy to make. This Carrot Cashew Salad is perfect for spring, although you can really enjoy it all year round. Plus, it will stay nice and fresh for at least two days when refrigerator, making it a lovely side for your grilled recipes, picnics, and other summer gatherings. Or enjoy it as a light lunch or dinner with some tasty bread.

As for the flavour and texture profile, this has everything you are looking in a coleslaw-style salad. It’s fresh and with a crunchy element, it’s savoury with a hint of sweetness and tartness. It’s a win-win!

This Carrot Cashew Salad is easy to make with just a bunch of simple ingredients, but its flavour is nothing short of delicious! Infused with fresh thyme, apple vinegar, maple syrup, and Dijon mustard, it is savoury and subtly sweet. Perfect for the grilling season – or any other occasion.

Ingredients

  • 6 cups shredded carrots (5-6 medium carrots)

  • 1/2 to 2/3 cup cashews, toasted and roughly chopped

  • 1 tsp. fresh thyme

  • 1/3 cup chopped parsley

  • 1 tsp. olive oil

  • 1 tsp. apple vinegar

  • 1 tsp. maple syrup

  • 1 tsp. Dijon mustard

  • pepper, to taste

  • salt, if necessary (I did not add)

Directions

  • In the small bowl, whisk together the mustard, olive oil, maple syrup, and apple vinegar. Note: this amount will be enough to lightly coat the salad; you may want to increase it.
  • Combine the carrots with the herbs and dressing in a medium bowl. Try and adjust the taste if necessary – you may need a touch of salt or /and black pepper.
  • You can serve this salad immediately, but it will be only better if you cover and refrigerate it for an hour or even longer. (It will be only better the next day.) Combine with the chopped cashews just before serving (otherwise, they will become soggy.) Enjoy!

    What a delicious salad using carrot and cashews! Some dried cranberries would be great on it too, with that tangy dressing. Yum!
