Ingredients

  • Sea Buckthorn Syrup:
  • 1 cup (about 150 g) sea buckthorns – frozen or fresh

  • 1/3 cup (80 ml) water

  • 2 tbsp. (40 g) honey

  • 1 tbsp. (about 6 g) grated ginger, or more for a pronounced spicy kick

  • Honey Sea Buckthorn Cocktail with Ginger:
  • 1 oz. (30 ml) white rum

  • 1/2 oz. (15 ml) Orange liqueur such as Cointreau or Triple Sec

  • 1 oz. (30 ml.) Sea Buckthorn Syrup

  • 1/2 to 1 oz. (15-30 ml.) lemon juice

  • ice, for chilling and serving

Directions

  • Combine water with the sea buckthorns (don’t need to thaw if frozen) in a small saucepan. Bring to a boil, then reduce heat and simmer for about 7-10 minutes, mashing the berries to help them release juices. Stir in the grater ginger and honey in the end.
  • Off heat and let it cool completely. Try and adjust flavour by adding more ginger (juice) or honey. Pass the berries through a fine mesh sieve, using a spoon to release as much juices as possible then discard the solids. You will have about 1/2 cup of the concentrate. You will not need all of it; keep it in an air-tight container or jar and keep refrigerated for up to a few days and use for other recipes, like Orange Sea Buckthorn Cocktail or Orange Sea Buckthorn Milkshake with Triple Sec
  • For the cocktail, in the shaker, combine the rum, orange liquor, lemon juice (starting with 1/2 oz.), sea buckthorn syrup, and ice and shake vigorously for about 20-30 seconds. Try and adjust the flavour by adding more more alcohol, syrup, or juice. Also, if the cocktail is too sour to your liking, you can add some honey. Shake again and filter if desired or serve over the ice (serving with ice will make the drink lighter as the ice melts). Garnish as desired and enjoy!
