Hello everyone – happy Friday. I hope everyone is excited about the weekend, right?!
Today I am bringing the recipe that might not be prefect to celebrate weekend, yet it is perfectly delicious and super easy to make. That’s why you can enjoy it any time of week, any time of year.
You might know that I do love salads – a huge part of my recipes here are salads. And you’ve probably also noticed I often like some interesting – and sometimes not so common – combinations. However, lately, I’ve been really into simple salad like coleslaw. By the way, please check this Brussels Sprout Slaw. So, besides this carrot salad, you will see few more soon!

Carrot Raisin Salad
Many of you are probably familiar with Carrot Raisin Salad. It’s easy and quick to make, affordable, tasty, and somewhat nostalgic. My version is a little bit different from most recipes you will find online. First of all, it’s more on savoury side. Sweeteners such as honey or even sugar are common ingredients, but I personally don’t see the need of extra sweetness, at least as long as carrots are nice and sweet enough. Also, the addition of thyme accentuates the savoury side of it.
Also, the dressing is lighter than most recipes would suggest. Here is the combination of plain yogurt or sour cream used with just a little addition of mayo. Creamy enough without extra calories. Plus, if you use yogurt or sour cream, they add a little pleasant tanginess. And if you opt for yogurt, there would be a small addition of protein. Win-win, in my book!
Of course, this salad is super versatile too, soo feel free to adjust to your taste. Carrots are too sweet? A little drizzle of lemon juice will do! Not too sweet enough? Try a bit of honey or maple syrup. Not so juicy? An addition spoon of yogurt will help. Don’t like raisins? Try other dried fruit or berries like cranberries, currants, or apricots. Want some extra crunch? Consider adding some nuts or seeds then! Don’t like or have on hand fresh thyme? Think of other fresh herbs such as parsley, dill, or even oregano.

Carrot Raisin Salad

~ 4 cups grated carrots (4-5 medium carrots)
1/2 t0 2/3 cup raisins of your choice
about 1/3 cup of plain yogurt of sour cream
1 tbsp. mayo
a pinch of salt and black pepper, each
1/2 to 2/3 tbsp. fresh thyme
Directions
- In a small bowl combine and quickly whish the yogurt, mayo, thyme, salt, and pepper.
- Gently combine the carrots with raisins and dressing in a medium bowl. Try and adjust the taste if necessary.
- You can serve this salad immediately, but it will be only better if you cover and refrigerate it for an hour or even longer. Enjoy!

Nostalgic is the right word here for sure! When I was younger, my family would occasionally go to a local cafeteria for dinner on Sunday evenings. My Dad would always (and I mean always) get carrot-raisin salad. I don’t remember my mom ever making this at home, though. This sounds like a fresh and healthy side dish – and like Neil said, it would pair well with grilled meat!

I love carrot and raisin salad, and I haven’t had it in years and years. I’ve never made it or seen a recipe, so thank you for that. I think the only time I’ve ever had it was when I would buy it at a deli, so go along with a sandwich or something. Hope you have a great weekend!
