Ingredients

  • ~ 4 cups grated carrots (4-5 medium carrots)

  • 1/2 t0 2/3 cup raisins of your choice

  • about 1/3 cup of plain yogurt of sour cream

  • 1 tbsp mayonnaise

  • a pinch of salt and black pepper, each

  • 1/2 to 2/3 tbsp. fresh thyme

Directions

  • First prepare the dressing. In a small bowl whisk together the yogurt, mayonnaise, chopped thyme, salt, and black pepper until the mixture becomes smooth and well combined.
  • Next place the grated carrots and raisins in a medium bowl. Pour the dressing over the salad.
  • Then toss everything gently until the carrots and raisins are evenly coated with the dressing. Taste the salad and adjust the seasoning if necessary by adding a little more salt or pepper.
  • The salad can be served immediately. However, for the best flavour, cover the bowl and refrigerate it for about 1 hour before serving so the flavours have time to develop.

My Dad would always (and I mean always) get carrot-raisin salad. I don’t remember my mom ever making this at home, though.
