Hello, folks – Happy New Year!

I hope you all had a wonderful holiday season, and 2025 has been treating you well so far.

And I am finally back after taking nearly one month off from blogging. I will not like and admit it is so hard to return after quite an absence. So I am going to keep it short and simple today.

One thing before I jump to the recipe. I got my camera fixed and back! It happened just a few days before Christmas (Christmas miracle?) So, I could even photograph a couple of easy festive recipes. They will be my backup material for next season.

Carrot Salad with Pistachios

I guess, you can call this Carrot Salad with Pistachios a slaw. This easy salad is made just with a few simple and relatively affordable ingredients (well, pistachios are quite pricey, but you will need just a little. Besides, you can always use other nuts like almonds.) Dill goes extremely well with carrots, and its addiction makes a huge difference.

And unlike many dressing recipes for slaws, this salad calls for a light and healthier version. Olive oil, honey, and lemon (or apple cider vinegar) is what you need to enjoy a great carrot salad. So fresh, so tasty!

This Carrot Salad with Pistachios, dill, and honey lemon dressing is a simple, fresh, light, and tasty recipe. It is not overloaded with a mayo dressing making this recipe perfectly healthy for post-holiday time (and all year round!)

Ingredients

  • 6 cups shredded carrots (~ 650 gr. or 5-6 medium carrots)

  • about 1/2 cup (5-6 gr.) fresh dill, chopped

  • about 1/2 cup (50-60 gr.) shelled pistachios, roughly chopped – you can use salted or unsalted

  • 2-3 tbsp. (30-45 ml.) extra virgin olive oil

  • 1 to 1 1/2 tbsp. (20-30 ml.) honey – can use maple syrup

  • 1/2 tbsp. (7.5 ml.) lemon juice or apple cider vinegar – may add a bit more

  • a pinch of salt

Directions

  • In the small bowl, whisk together the oil, honey, lemon, and a pinch of salt (bare in mind the saltiness of pistachios).  Note: this amount of dressing will be enough to lightly coat the salad; you may want to increase it.
  • Gently combine the carrots with the dill and dressing in a medium bowl. Try and adjust the taste if necessary – you may want an extra touch of salt or even black pepper.
  • You can serve this salad immediately, but it will be only better if you cover and refrigerate it for an hour or even longer. Sprinkle with pistachios just before serving (otherwise, they will be soggy.) Enjoy!

    Great combination, Ben! We have all the ingredients on hand (I jus bought dill for a salmon mousse) so I think we will have this tonight as a side to our grilled steak. By the way, I thought I would try once more signing up to get your emails… I tried using my blog address and was told it was and “invalid request” so I tried our other address and it seemed to have worked. I will keep you posted!
