Carrot Salad with Pistachios and Pomegranate
This carrot salad – or slaw – is made just with a few simple and relatively inexpensive ingredients (well, pistachios are quite pricey, but you will need just a little. Besides, you can always swap for other nuts like almonds or walnuts.) Fresh thyme goes extremely well with carrots and makes the flavour more complex.
Of course, you can assemble your own salad by swapping and adding your favourite ingredients. If you don’t have or don’t like pomegranate, you can add in dried fruit and berries such as cranberries, currants, or raisins. Of course, that will be a different salad, yet still delicious.
While I don’t mind creamy dressings in my slaw, most of the time I opt for a lighter one. In this case, I used the combination of olive oil, honey, and apple cider vinegar. There’s room for creativity, too. Think of using maple syrup or pomegranate molasses as a sweetener. Lemon, orange, or clementine juice will also work nicely in place of apple cider vinegar. But be mindful of natural sweetness of carrots. If they are super sweet and juicy, you may want to reduce the sweeteners and, perhaps, increase acidity.

Ingredients
6 cups shredded carrots (~ 650 gr. or 5-6 medium carrots)
1 tbsp. fresh thyme
1 cup (about 170 gr.) pomegranate seeds (arils)
about 1/2 cup (50-60 gr.) shelled pistachios, roughly chopped – you can use salted or unsalted
2-3 tbsp. (30-45 ml.) extra virgin olive oil
1 to 1 1/2 tbsp. (20-30 ml.) honey – can use pomegranate molasses or maple syrup
1/2 to 1 tbsp. (7.5 to 15 ml.) apple cider vinegar – can use lemon juice
a pinch of salt
Directions
- In the small bowl, whisk together the oil, honey, apple cider vinegar, and a pinch of salt (bare in mind the saltiness of pistachios). Â Note:Â this amount of dressing will be enough to lightly coat the salad; you may want to increase it.
- Gently combine the carrots with the thyme, pomegranate, and dressing in a medium bowl. Try and adjust the taste if necessary – you may want an extra touch of salt or even black pepper.
- You can serve this salad immediately, but it will be only better if you cover and refrigerate it for an hour or even longer. Sprinkle with pistachios just before serving (otherwise, they will be soggy.) Enjoy!

I’m with you on my preference for lighter vinaigrettes on my slaws rather than creamy dressings. This is a lovely winter dish, bright colours tangy flavours to brighten any dreary, dull winter day. Pomegranate and pistachios are the icing on the cake, if you will.
