As I mentioned in my previous post, we had a super cold weekend. With the windchill, the temperate reached the lowest 42 degrees C below zero. Daisy wasn’t not too happy about that, spending most time by the fireplace. Who can judge her, right? Hearty and soul-warming soup is another option to deal with extreawm cold.
We didn’t have this Chicken Orzo Bean Soup, though, as I made and photographed in January. But it would have been really perfect, too.
Chicken Orzo Bean Soup
This soup is easy and relatively quick to make. Quick homemade broth, chicken pieces, vegetables, beans, and orzo – this soup is packed with protein and fiber along with healthy fats and carbs, so it will keep you feel full for a long time.
Certainly, you can use store-brought stock to accelerate the process. But I would recommend making it from scratch; it only adds about 45 minutes to the total cooking time.
You can easily customize it to your preferences. For instance, you can swap orzo for any other type of pasta or beans for other legumes such as chickpeas or lentils. You can also add some other ingredients such as root vegetables (sweet potatoes or parsnips), spinach or kale.

Chicken Orzo Bean Soup

Ingredients
2-3 chicken thigs with skins
1 large red onion, sliced
2-4 garlic cloves, minced
1 tbsp. olive oil
200 gr. carrots, thickly sliced (~2 and 1/2 cup)
1/2 to 2/3 tsp. salt, to taste
1 tsp. smoked paprika
1/4 tsp. chipotle powder
1-2 bay leaves
1 tbsp. fresh or 1/2 tbsp. dry herbs such as thyme, oregano, Italian seasonigs, etc.
1 can (19 oz. or 540 ml.) beans of your choice, drained and rinsed
1/2 to 2/3 cup orzo
Directions
- Fill a large pot with water (about 9 cups) and place chicken thighs in the pot. Bring to a boil, then reduce heat and simmer, skimming the scum, until the meat falls from the bone, about 40-50 minutes. Remove chicken, discards the skins (You can add them to your dog’s dinner bowl), and shred the meat. Set aside the broth and chicken. You should get about 8 cups of broth.
- In a different pot heat the oil over low-medium heat and cook the onions and garlic, 5-7 minutes.
- Add the carrots and cook for about 5 minutes.
- Add all the broth along with the herbs and spices. Simmer, covered, skimming the scum, for about 10-12 minutes, or until the carrots are getting soft.
- Add in the drained and rinsed beans, shredded chicken, and orzo. Cook for about 7 minutes or until orzo is cooked. Try and adjust the seasoning, if necessary. If the soup is too thick to your liking, you can add a bit more water. Enjoy!
