Ingredients

  • 2 cups (~225 gr.) dry pasta or 4 1/2 cups (~800 gr.) of cooked pasta; use short type pasta (fusilli, farfalle, penne, etc.)

  • 250-300 g. cold-smoked salmon, sliced or turned into pieces – while the texture and flavour will be slightly different, hot-smoked salmon will also work nicely

  • 1 1/2 cups (~300 gr.) cherry tomatoes, halved if large

  • 1 English cucumber, sliced

  • 2 large handfuls baby arugula

  • fresh herbs like parsley or dill, chopped

  • 1-2 tbsp. (15-30 ml.) extra virgin olive oil

  • 1/2 – 1 tbsp. (7.5 to 15 ml.) lemon juice

  • freshly ground black pepper, to taste

  • salt, optional, to taste – depending on the saltiness of your salad

Directions

  • Bring a large pot with well-salted water to a boil. Add the pasta and cook until al dente (check the package for recommended cook time). Drain and rinse well under cold water to stop the cooking process.
  • In a large bowl, combine the pasta, cherry tomatoes, cucumbers, parsley, and smoked salmon. Drizzle with the oil and lemon juice and toss to coat. Try and season with black pepper and salt, if necessary. Stir the arugula just before serving.
  • You can serve it right away, but ideally chill it for at least one hour. Keep the leftovers refrigerated for 2-3 days. If making the salad ahead, I recommend adding the arugula just before serving so it stays fresh and crisp.
