Hey folks – how are you doing? I hope this week has been treating you well, and you are ready for the weekend. And I bet it is a short week for most of my American readers; lucky you!

As some of you may have read a few posts ago, we had some renovations that made our pets (but mostly Daisy) stressed out. We knew that any new or unusual environment could cause anxiety or even depression in pets, but we never would have expected it would be a long-lasting thing (nor it could be that bad). Anyway, Daisy’s appetite significantly reduced and she kept sleeping most of the day. Naturally, she would also lost interest in any activities like being outdoor (and that’s summer – we rarely see her home these days!) That continued even once all renovations were over and all unknown people disappeared, so we brought her to the vet.

The vet did not find any indications of being physically unwell – so just as we thought, pure cat was stressed out.

But long story short, the vet prescribed her anxiety medication (which made her even more sleepy for a few days), but it definitely helped – and she is 100% back to her normal behavior and activities now.

The only thing is that we are having the second round of reno (siding) in a week or so, but the vet assured the meds would help Daisy to go through this time as well.

Anyway, let’s talk about this delicious Pesto Pasta Salad!

It is absolutely easy to make, but the flavour profile is exceptional.

To make it, you will need short type of pasta (e.g., fusilli, farfalle, etc.), mozzarella (I used mini but you can simply slice a large ball), cherry tomatoes, pine nuts, basil, arugula, and classic pesto. I used a store-bough jar, but you can grab homemade.

It is quite versatile, too. You can swap or add in many other ingredients such as sun-dried tomatoes, olives, marinated artichoke hearts, or even deli meats like salami or prosciutto. In fact, you can also play with different types of pesto (red pesto would be amazing!)

Pasta combined with cherry tomatoes, mozzarella balls, toasted pine nuts, fresh basil, and pesto in this tasty Pesto Pasta Salad.
Serves around 6 as the main course or more as a side dish.

Ingredients

  • 2 cups (~225 gr.) dry pasta or 4 1/2 cups (~800 gr.) of cooked pasta; use short type pasta (fusilli, farfalle, penne, etc.)

  • 1 1/2 cups (~300 gr.) cherry tomatoes, halved if large

  • 8 oz. (225 gr.) mini mozzarella balls, sliced in half – or a large ball torn into pieces

  • 2 large handfuls baby arugula

  • 2-3 tbsp. pine nuts, lightly toasted

  • 1/3 cup to 1/2 cup (~85 to 125 gr.) pesto, less or more as desired

  • a little of black pepper

Directions

  • Bring a large pot of salted water to a boil. Add the pasta and cook until al dente (check the package for recommended cook time). Drain and rinse well under cold water to stop the cooking process. The cooked pasta should yield about 800-850 gr.
  • Add the pasta, pesto, and a bit of to a large mixing bowl and toss until evenly combined. Start with 1/3 cup of pesto and then add more if not coated enough to your liking. 1/2 cup of pesto will not make this pasta greasy, but it is better to start with a smaller amount.
  • Add the remaining ingredients and gently toss until evenly combined.
  • You can serve it right away, but ideally chill it for at least one hour. Keep the leftovers refrigerated for 2-3 days. Enjoy!

    I just made a batch of pesto, so this will be easy to put together. Also, the cherry tomatoes (SunGold – my favorite!) that we’re getting from the farmers market are absolutely beautiful. They will be perfect to pair with this. And I love that you included arugula.
