Hello, folks! How are you doing? I hope you have had a great and restful weekend and now ready for a new week.

If you have been following my blog for a while, I probably know that I am a big fan of dulce de leche. And I mean that: give me a jar of dulce de leche and a spoon, and it will disappear quickly.

And there is a tradition, too. Every year around my birthday (end of April and early May), I share some recipes with dulce de leche. This year hasn’t been an exception. In fact, I have gone overboard. Normally, I create and post two to three recipes, but this year it’s been way more. So, please forgive me and be ready to see too many dulce de leche recipes over the next few weeks.

Secondly, did you know peanut butter and dulce de leche go wonderfully together? Say what?!! You did not?! How come? Please promise me you will check this Dulce de Leche Peanut Butter Ice Cream, too. This combination may sound surprising, but in my book, these two ingredients are a match made in heaven. Both are rich and creamy and also peanut butter nicely offsets the sweetness of dulce de leche.

As a result, you get super creamy and luscious oatmeal. Danger alert: it’s so rich and indulgent that you will probably need a nap after breakfast. That’s all right – as long as you enjoy this on your weekend.

And if you are feeling even more indulgent, you can always add chopped peanuts or shredded dark chocolate. They will also add some texture.

Ingredients

  • 1 cup (ab. 90 g.) old-fashioned / rolled oats (5-7 minute cooking time)

  • 1 and 1/2 cup to 2 cups (360 to 450 ml.) of water –  see notes

  • a good pinch of salt

  • 2-3 tbsp. (30-45 g.) peanut butter plus more, for topping – I used smooth peanut butter

  • 2 tbsp. (40 g.) dulce de leche plus more, for topping

  • 1 tsp. (5.5 ml.) vanilla extract

Directions

  • Add water and salt to a medium pot. Bring to a boil over medium-high heat.
  • Once boiling, lower the heat to medium-low and add in the oats, peanut butter, and dulce de leche.
  • Cook, stirring occasionally, until the oats have thickened up and are tender, about 3-5 minutes – depending on the recommended cooking time. The cooking time suggested in this recipe will result in a slightly chewy oatmeal. You can cook for a few minutes longer, if you prefer it softer.
  • Lastly, add the vanilla extract and turn off the heat. If you have time, cover the pot with a lid and let the oatmeal stay for a 5 minutes or so (this makes the oatmeal softer and somewhat lighter), but that’s optional.
  • Serve oatmeal with an additional spoon of peanut butter and dulce de leche. In addition, you can sprinkle with dark chocolate or chopped peanuts.

Notes

  • The standard ratio is roughly 1 cup of liquid per 1/2 cup of oats, resulting in quite thin porridge. Personally, I love to use less water for an extra thick consistency. Also, I used water, but milk is an excellent option for more delicate flavour and richer consistency. When using milk, I like combining ½ a cup of water and ½ a cup of milk.
