Personally, I am starting my week off the right way as I am sharing this scrumptious recipe!
It is going to be quite a hectic week for me, probably as well as the next one, as I would like to tackle some things at work before going to our vacation. Yeah, in just less than two weeks, Andrew and I are going to the Netherlands, as well as Belgium and Luxembourg. As always, it is going to be quite an intense trip as we are not staying in one place for longer than three nights – and even those stays mean exploring the vicinity. I guess we are planning to visit more than 20 towns and villages, and that is only in the Netherlands! I already feel that after this three-week vacation, I may need an extra week, to rest from our trip lol.
Regardless, I am excited. And I hope cuisines of these countries would inspire me for sharing some recipes here, too.
Dulce de Leche Recipes
If you have been reading my blog for a while, you probably know about my love for dulce de leche. I mean, give me a jar and a spoon, and it will probably be empty within an hour or two. And I am not exaggerating – this is an utterly treacherous thing to have in our house.
Also, you are probably aware of that I particularly like sharing dulce de leche around my birthday (in May). I mean, it totally makes sense, right? Just like these Dulce de Leche Shortbread Bars. Or these Crêpes with Dulce de Leche Sauce. And this luscious Chocotorta Trifle. And even a cocktail – Dulce de Leche Martini.
Crêpes with Dulce de Leche, Mascarpone, and Coffee Sauce
I know, it is a super long name, and Google will probably hate me.
On the other hand, sometimes it is nearly impossible to go with a shorter name. At least, it would not have worked with these Crêpes with Dulce de Leche, Mascarpone, and Coffee Sauce (not to mention the rum!)
I often ask Andrew to give me some recipe ideas – this time his task was to think of crepes, preferably with a dulce de leche sauce. His suggestion was either crepes with a Tiramisu cream or to combine mascarpone with dulce de leche.
I thought both these ideas were great, and I have combined them together. Surprisingly, the sauce did not turn out overly sweet; mascarpone, rum, and coffee balance out the sweetness well. In fact, dulce de leche does not have a super pronounced flavour here – really it is like a Tiramisu filling with a caramel-y hint. Needless to say, the addition of coffee and dark rum makes it feel like Tiramisu even further!
My friends, these crepes are incredibly delicious! They are surely not a breakfast item (unless your are planning to have a nap after it haha). But they will be a perfect dessert or a late breakfast for a lazy holiday weekend.

Crêpes with Dulce de Leche, Mascarpone, and Coffee Sauce

hourThese Crêpes with Dulce de Leche, Mascarpone, and Coffee Sauce (and dark rum!) are a luscious and elegant dessert or a festive brunch for a lazy weekend.
Ingredients
- Crêpes:
1/2 of the batter from Crêpes (Basic French Crêpes) or your favourite recipe; this sauce will be enough for about 8-10 crepes.
Dark chocolate, shaved, for serving
- Dulce de Leche Mascarpone Sauce:
150-200 gr. mascarpone, room temperature
250 gr. dulce de leche, room temperature
1 tsp. vanilla
1 tbsp. espresso powder
a pinch of salt
2-3 tbsp. dark rum (or cream for non-alcoholic version)
Directions
- Crêpes:
- Make crepes as per from this recipe Crêpes (Basic French Crêpes); you will need to make 1/2 of batter as this sauce will be enough for ~8-10 crepes. Or you can make the entire batch and use leftover crepes for other recipes.
- Dulce de Leche Mascarpone Sauce:
- In a large bowl combine the mascarpone and dulce de leche (be sure they are the same room temperature, otherwise the mascarpone could curdle). Using a hand mixer, whip at low speed for about 1 minute or so, just until combined.
- Add the espresso powder, salt, and vanilla and continue for another 30-40 seconds.
- Lastly fold in the rum (or cream for a non-alcoholic version). Try and adjust the sweetness and other flavours (i.e., more coffee or rum), if necessary.
- Serve 1-3 crepes per serving along with some sauce and garnished with the dark chocolate or as desired (i.e., dusted with cocoa powder, icing sugar, etc.)
- If you have any leftovers of crepes, they will stay fresh refrigerated for 1-2 days; simply gently reheat them in a skillet over low heat or in a microwave. If you have any leftovers of the sauce, refrigerate it in a container for up to 3 days and enjoy on a toast, with pancakes, waffles, etc.
Notes
- This sauce is subtly sweet and you may add more of dulce de leche, if desired.
- Remove the mascarpone and dulce de leche from the fridge 1 hour prior to making the sauce; they should be the same temperature, preferably room temperature, to avoid curdling.
- Instead of rum, you can use other liquors such as bourbon, brandy, or even Kahlua.
