Hello everyone, how are you doing? Enjoying the week.

I am doing well, too, thanks for asking. “One, two, three…” – what am I doing, you may ask? Counting days until my vacation! Well, our vacation – I was kind enough to allow Andrew to go with me :) Super excited in fact! But since these days have been quite busy, I am going to present this recipe without further ado.

Crêpes with Dulce de Leche Sauce

You know my love for crêpes. And undoubtedly, you also know my love for dulce de leche. So basically this recipe was written in the stars!

The sauce is easy to make, but it is ridiculously rich and delicious. It is the combination of butter, cream, dulce de leche, and whiskey infused with vanilla beans. Yes, as you can imagine, the sauce is super buttery and fatty (say hello to your cholesterol level! lol) But why not enjoy it once or twice, right?

I used whiskey, but I bet some other spirits would equally work. Think of dark spiced rum or bourbon. And while the scoop of ice cream and pecans are optional, I would recommend it. After all, we’re already consuming a ton of calories – so why stop yourself? :)

These Crêpes with Dulce de Leche Sauce (and whiskey!) are a rich, smooth, luscious, and boozy. Serve them with a scoop of ice cream and toasted pecans for an ultimately decadent dessert!

Ingredients

  • Crêpes:
  • 1/2 of the batter from Crêpes (Basic French Crêpes) or your favourite recipe; this sauce will be enough for about 8-10 crepes.

  • toasted pecans or/and ice cream, extra dulce de leche – optional, for serving

  • Dulce de Leche Sauce:
  • 4 tbsp. (~60 gr.) butter

  • 2/3 cup dulce de leche

  • 1/4 cup cream 10% or 18%

  • 100 gr. cream cheese, room temperature

  • ~ 1/2 to 2/3 cup whiskey (rum or bourbon will also work)

  • a good pinch of salt

  • 1 – 1 1/2 tsp. vanilla extract or 1/2 – 1 vanilla been, seeds scraped

Directions

  • Crêpes:
  • Make crepes as per from this recipe Crêpes (Basic French Crêpes); you will need to make 1/2 of batter as this sauce will be enough for ~8-10 crepes. Or you can make the entire batch and use leftover crepes for other recipes.
  • Dulce de Leche Sauce:
  • In a medium heavy-bottom pan or saucepan combine the butter, dulce de leche, cream cheese, cream, and over and bring to a boil over low-high / medium heat. Then decrease the heat and simmer, whisking often, for about 5 minutes, until incorporated and thickened.
  • Add the whiskey (or rum or bourbon is using) – start with 1/2 cup. Let it boil for about 40 seconds. Try and add more, if you want a boozier version.
  • At the end, stir in the vanilla and mix to incorporate. Turn off the heat and cool the sauce about 30 minutes before serving. Serving suggestion: 1-3 crepes per serving generously drizzled with the sauce; optionally serve with ice cream and toasted pecans. Enjoy!

    I did know about your love of crêpes (and I share that love) but, until these past few posts, I was unaware of your love for dulce de leche. We love it, too, but in moderation! Still, with these beautiful crêpes, it seems perfect.
