Hey folks! I hope you are doing well.

I cannot say I’ve been a good blogger over the last two weeks in terms of posting and checking out my fellow bloggers’ posts. It’s been crazy busy time, and I am really dreadful about next week. So many things are supposed to happen at work including a summer student who starts tomorrow working with me and who will be working independently for over two weeks.

On the other hand, I will need to be strong just for a couple of days as my vacation starts on Thursday. Yay to this. I bet I will not even notice the long flight to Croatia (which includes two stops), as I will be happily sleeping most of its time :)

Anyway, I am going to keep it short and sweet today.

Dulce de Leche Spread

You probably know my love for dulce de leche, don’t you? So I am excited to share with you this Dulce de Leche Spread!

In fact, I was working on a different recipe that required a creamy and thick dulce de leche sauce (Hopefully, I will share that one with you after my vacation.) And then I realized that the sauce was so good on its own that it easily can be turned into a tasty spread. After all, we all love chocolate spreads, so why not a span with dulce de leche?

This spread is super easy to make – just like 10 minutes plus time for chilling. Basically this spread reminds a caramel cheesecake: rich, silky, and somewhat even airy. You can enjoy it on a toast, with crepes, pancakes, French toasts, or even use it as a cake frosting. Well, you can even eat it strait from the bowl / jar – no judging. You can also thin it up by adding some light cream or milk to make a sauce for dipping.

If you love dessert spreads like Nutella or cookie butter spread, you should try this Dulce de Leche Spread then. It’s rich, silky, and irresistibly delicious!

Ingredients

  • 150 gr. cream cheese, at room temperature

  • 2 tbsp. cream 10 or 18%

  • 1/2 to 2/3 cup dulce de leche

  • optional flavorings: 1 tsp. vanilla extract, a pinch of cinnamon or cardamom

  • optional additions: toasted nuts (pecans, hazelnuts, almonds, etc.) or shaved dark chocolate or a pinch of sea salt flakes

Directions

  • In a small-medium thick-bottomed saucepan combine the softened cream cheese, dulce de leche, and cream over low-medium heat. Simmer for about 5-7 minutes, whisking constantly, until combined, smooth, and thickened. If desired, still in the additional flavourings like vanilla extract or cinnamon. You may add more cream, for a less thicker version, if decired.
  • Off heat, transfer to a container or bowl and let it cool completely. If desired, garnish additionally with toasted and chopped nuts, chocolate, etc. Enjoy on a toast, with pancakes, crepes, etc. Keep refregirated.

    I’ve always loved Nutella and cookie butter, so I’m definitely excited to try this one out. The fact that it only takes 10 minutes to make is such a plus. I can already imagine spreading it on some toast or using it as a cake frosting – it sounds so rich and silky.

    I think of your suggestion that this be used as a cake icing is brilliant – I can only imagine how good it tastes! I really hope you got through all the stress and got that plane nap you deserved!
