Hey, folks – I hope you all are doing well.

I believe many of you have made — or at least tasted — peanut butter oatmeal balls at least once. If you enjoy this kind of treat, you’ll love these Peanut Butter Dulce de Leche Oatmeal Balls too. They combine the wholesome comfort of oats and peanut butter with the caramel-like richness of dulce de leche, lifting a familiar snack into something more indulgent — without making it overly sweet. So, let’s dive into these Peanut Butter Dulce de Leche Oatmeal Balls.

Dulce de Leche and Peanut Butter

Did you know peanut butter and dulce de leche go wonderfully together? My friends, in my humble opinion, these two tasty ingredients are a match made in heaven. Both are rich and creamy and also peanut butter nicely balances out the sweetness of dulce de leche. And as always, when making any dessert, please don’t forget a good pinch of salt.

Why You’ll Love These Peanut Butter Oatmeal Balls with Dulce de Leche

  • No-bake simplicity: No oven required, just a bowl and a few minutes of hands-on time.
  • Balanced indulgence: Nutty oats and peanut butter meet dulce de leche for richness without cloying sweetness.
  • Minimal ingredients: Made with just five main ingredients you likely already have.
  • Make-ahead friendly: These oatmeal balls store well in the fridge and are perfect for grab-and-go snacking.
  • Customizable: Easy to adapt with add-ins or flavour tweaks.

Flavour and Texture Profile

These oatmeal balls are soft and chewy with a dense, satisfying bite. The oats bring a hearty texture, peanut butter adds nuttiness and creaminess, and dulce de leche contributes gentle caramel notes. The overall flavour is rich but restrained, with sweetness that feels balanced rather than overpowering.

Ingredients You’ll Need for This Recipe

  • Rolled oats: The base of the recipe, providing structure, chew, and subtle nuttiness; toasting them is optional but adds depth.
  • Peanut butter: Smooth or crunchy both work; natural peanut butter may require a small splash of liquid to bind.
  • Dulce de leche: Adds caramel sweetness and richness that transforms classic oatmeal balls into a more indulgent treat.
  • Vanilla extract: Rounds out the flavours and enhances the sweetness.
  • Salt: A small pinch sharpens the flavours and balances the sweetness.
  • Milk or water (optional): Helps adjust the consistency if the mixture feels too dry.

Possible Additions and Variations

  • Chocolate chips or chopped dark chocolate: For a more dessert-like version.
  • Chopped nuts: Such as roasted peanuts or almonds for extra crunch.
  • Cinnamon or espresso powder: A small pinch adds warmth or depth.
  • Coconut flakes: For a slightly tropical twist.
  • Swap peanut butter: Almond or cashew butter works well, though sweetness may need adjusting.

How to Make Peanut Butter Oatmeal Balls with Dulce de Leche

If you have a few extra minutes, lightly toast the rolled oats in a dry pan until fragrant — this step is optional but enhances the nutty flavour. Meanwhile, gently warm the peanut butter and dulce de leche together until soft and easy to mix, then stir in the vanilla and salt.

Combine the warm mixture with the oats, stirring until everything is evenly coated. The mixture should be slightly sticky and pliable; if it feels dry, add a small splash of milk or water. Chill briefly to help it firm up, then roll into balls.

Once shaped, the oatmeal balls can be enjoyed right away or refrigerated until ready to serve. They firm up nicely in the fridge but soften again after a few minutes at room temperature, making them easy to enjoy whenever the craving hits.

Ingredients

  • 2 cups (165 g) rolled oats

  • 1/2 cup (125 g.) peanut butter of your choice; I used smooth – you may need a little more

  • 1/2 cup (150 g.) dulce de leche – you may need a little more

  • 1 tsp. (5.5 ml.) vanilla extract

  • a good pinch of salt

  • you may need a little splash of milk or water

Directions

  • Place the oats onto a pan over high-low to medium heat and toast, stirring often, for about 5 minutes, until nutty aroma. This is an optional step, but it will bring up a more complex and nutty flavour.
  • In a microwave-safe bowl or stovetop, combine the peanut butter with dulce de leche. Heat until warm and slightly melted. Stie in the salt and vanilla.
  • Combine the wet mixture with the oats. The mixture should remain slightly sticky and wet. If it still looks dry, you can add a little splash of milk, water, peanut butter, or dulce de leche. Cover and refrigerate the mixture for about 20 minutes to firm up.
  • Remove from the fridge and shape balls. Depending on the size, you should get between 14 to 20 ball. Keep them refrigerated. When refrigerated, they firm up. If prefer to enjoy softened balls, let them stay at room temperature for 15 minutes or so. Enjoy!
