You already probably know that lavender pairs with so many fruit flavours, including:

So, today we are diving into another great pairing, raspberry and lavender.
Lavender Raspberry Mojito
This Lavender Raspberry Mojito is a fresh, luscious cocktail with a fruity and subtly herbal taste. To make it, use these ingredients:
- Rum – use light, white rum for this recipe. Dark or spiced rum overpowers the delicate aroma. If you prefer, substitute vodka or gin. For gin, choose a neutral, less juniper-forward option.
- Fresh raspberries – for adding a sweet, tart, and fruity flavour.
- Lavender Simple Syrup – adds the sweetness and a pleasant floral aroma.
- Limes – freshly squeezed lime juice adds signature freshness and tartness.
- Fresh mint leaves. Ideally, choose the variety with a delicate, subtle aroma.
- Ice cubes – for chilling and serving.
- Sparkling water or club soda – optionally, for topping. I normally don’t add it and enjoy a mojito with plenty of ice instead.
- Extra lime wedges, blackcurrant, and mint sprigs – for garnish.

How to Make Lavender Raspberry Mojito
That’s super easy, really. Muddle the raspberries, lime juice, lavender syrup, and mint leaves in a small jug or shaker, crushing the berries and mint with a pestle (muddler). Pour into a glass and add a handful of ice. Pour the rum over, stirring with a long-handled spoon. Top up with soda water (if desired), garnish with more fresh raspberries, lime wedges, and mint, and enjoy!
