Also, can you believe it’s August already? I certainly cannot! I have so many fun summer recipes to share with you. So, without further ado, please let me introduce another tasty recipe. This Boozy Lemon Raspberry Milkshake, precisely.

Boozy Lemon Raspberry Milkshake

If you love spiked milkshakes, you will love this Boozy Lemon Raspberry Milkshake recipe. It is a breeze to make and a lot of fun to enjoy.

To make it, you will need the following ingredients:

  • Limoncello – a traditional Italian lemon liqueur. It adds flavour and sweetness to this milkshake.
  • Vanilla ice cream. Be sure to let the ice cream sit at room temperature for 10 to 15 minutes, until it starts to soften, for easy blending. Also, as Limoncello is quite sweet, I recommend going with an ice cream brand that has a lower sugar content.
  • Fresh raspberries – add sweetness and tartness, as well as a refreshing element. You can use frozen raspberries, but you need to thaw and drain them first.
  • Lemons – add freshness and balance out the sweetness.
  • Milk – optional, only if you prefer a thinner milkshake. But you can also add more Limoncello for this purpose.
  • Fresh mint, raspberries, and lemon zest – optional, for garnish.

Ingredients

  • about 450 g. (1.5 US pint or 2 cups)
    vanilla ice cream

  • 1 cup (125 g.) fresh raspberries

  • 1/3 to 1/2 cup (80-120 ml.) Limoncello,
    or more if desired

  • juice of 1/2 lemon (about 2 tbsp. or 30 ml.)

  • 1 tsp. lemon zest

  • milk, optional – only if you prefer a thinner version

  • fresh mint, raspberries, lemon zest –
    optional, for garnish

Directions

  • Remove the ice cream from the freezer and let it sit at room temperature for 10 to 15 minutes, until it starts to soften, for easy blending. In the meantime, chill the glasses in the fridge or even freezer.
  • Place in the cup of your blender the softened ice cream, Limoncello (starting with about 1/3 cup), lemon juice, lemon zest, and raspberries.
  • Blend until the milkshake is smooth and pourable, about 40-60 seconds. Try and add more Limoncello or milk to achieve the desired taste and consistency. Divide the milkshake between the chilled glasses, garnish as desired, and enjoy!
