Blueberry Milkshake

You won’t regret this Blueberry Milkshake doesn’t have any booze, though! (But honestly who would stop you from turning it to a boozy milkshake?!)

If you often cook with blueberries, especially frozen, you probably know it could be challenging to deliver a great flavour. Blueberries sometimes can be bland and boring. The good way to enhance the flavour is roasting them. In this recipe I used a method of reduction, and it worked beautifully!

The process is ridiculously easy. You need to simply combine the blueberries with some sweetener (like maple syrup or honey), lemon or lime and spices if desired. Simmer the mixture until it’s nice and thick. That should take about 10 to 12 minutes. Then, cool it completely and use for this milkshake. And if you have any leftovers, you can use them for your yogurt, oatmeal or even a salad dressing.

And don’t worry about fresh blueberries. While I prefer fresh fruit and berry during the season, the frozen ones would be ideal for this recipe.

Also, if you feel adventurous, you can use some aromatics, too to infuse the blueberry sauce. Think of lavender, thyme, or mint.

Lastly, you can use ice cream of your choice. Vanilla or blueberry would be great (Although some blueberry ice cream brands have a weird artificial aftertaste – please avoid those.) If you want something extra decadent, think of chocolate flavour. Either way, it will taste great!

Ingredients

  • Blueberry Sauce:
  • 2 cups frozen blueberries

  • 2-3 tbsp. maple syrup or honey

  • 1 tbsp. lemon or lime juice

  • 1 tbsp. lemon or lime zest

  • a small pinch of salt

  • 1/8 tsp. cardamom (optional)

  • 1 tsp. vanilla extract (optional)

  • Milkshake:
  • 2 cups vanilla ice cream (blueberry or chocolate would work too) – preferably less sweet

  • 2 cups milk 2%

  • about 2/3 cup of the blueberry sauce or to taste

Directions

  • In a small saucepan, combine the frozen blueberries, lemon (lime) juice and zest, a pinch of salt, and maple syrup or honey. Bring to a boil then reduce heat and simmer for 10-12 minutes, stirring occasionally, until thickened and fragrant. At the end, stir in the cardamom and vanilla, if desired. Off heat and let completely cool.
  • In a mixer, place the blueberry sauce, ice cream, and milk. Blend until smooth. Try and adjust the flavour and consistency if desired (By adding more milk to thin it up, ice cream to thicken it up or the blueberry sauce for the added flavour.) Pour into glasses and garnish as desired (My suggestion is an extra spoon of the sauce). Serve immediately. Enjoy!

    Why use frozen blueberries if you are going to “boil” them? If they *are* frozen, at what approximate heat level should they be heated in order to thaw?

    Should they be mashed up in the pan/pot when they thaw?
    Should the syrup and lemon juice really be added in the beginning when the blueberries are still frozen?

    A lot of details are left out of this recipe.

      Hi Dave.

      We are not just boiling them. Frozen (and often fresh, too) blueberries tend to be “bland”. Combined with milk and other ingredients, their subtle flavour could get lost. Hence the purpose of “boiling” is to make a blueberry sauce to intensify the flavour. Certainly, you can use fresh blueberries as well, but personally I prefer to use fresh berries in those recipes where you don’t need to cook :)
      No need to thaw them and yes just combine the berries, syrup, and lemon juice at once. While cooking the sauce, of course, you could mash them, although it’s an unnecessary step as you are going to blend in a blender when making milkshake anyway.

    What a fun flavor for summer milkshakes! I don’t often go towards fruit milkshakes, and now I’m realizing that I’m missing out. This is perfect for these warm summer days! And as fate would have it, I just read about a place where you can pick wild blueberries here. Robbie and I are going to check it out tomorrow and see if we can find any!

    Definitely guaranteed to make your teeth blue! But honestly, what a spectacular colour. We don’t often splurge on milkshakes, my preference is always ice cream but this one is gorgeous enough to feature at a dinner party!

    I used to love strawberry milkshakes as a kid but I think this would be even better! I love your idea of adding an aromatic like lavender too and just look at the gorgeous colour.
