Hello, folks! How are you doing? I hope this week has been treating you well so far. And I certainly hope you enjoy the nice spring weather. It’s been a little cold and wet over the last few days here in Nova Scotia.

But it won’t stop me from sharing with you this delightful recipe for luscious and refreshing ice cream. After all, in our family, we enjoy ice cream all year round (although we shouldn’t, but anyone needs some guilty pleasure, right?)

Passion Fruit Ice Cream

Luscious and so refreshing, you will love this summer treat. Normally, I prefer rich and decadent ice cream flavours. But in summer, I tend to crave either simple vanilla ice cream or something lighter and fruity. And this recipe perfectly fits the bill.

It combines the richness of a traditional custard-based ice cream made with heavy cream, milk, and egg yolks and tangy passion fruit pulp. That’s a perfect summer balance of sweet and tangy.

This Passion Fruit Ice Cream is a rich but refreshing and tangy dessert that will make a delightful summer treat.

Ingredients

  • 3/4 cup (150 g.) granulated sugar

  • 4 large egg yolks

  • 1 ½ cups (375 ml.) heavy or whipping (35%) cream

  • 1 cup (240 ml.) whole milk

  • 1 cup (250 ml.)  passion fruit pulp, plus extra for serving

  • a pinch of salt

Directions

  • Using a medium saucepan, add the heavy cream and milk; stir until well combined.
  • Place over medium-low heat and bring to a simmer, stirring occasionally.
  • Meanwhile, using a separate heat-proof bowl, whisk together the egg yolks with sugar and salt.
  • Once the cream and milk mixture begins to simmer, pour half into the bowl with the eggs, whisking vigorously while you pour to prevent eggs from scrambling (this method is called “tempering”). It’s important not to add all the cream mixture at once.
  • Return the mixture to the saucepan and cook over medium-low heat, stirring constantly, until the mixture thickens and coats a wooden spoon, about 5 minutes. Do not let the mixture boil.
  • Once the custard mixture has thickened, remove from heat and pass through a fine-mesh strainer (just in cases there’s any small pieces of cooked egg) into a container.  Stir in the passion fruit pulp and mix.
  • Cover with plastic wrap, pressing the plastic directly onto the surface of the mixture, and refrigerate for at least 4 hours or preferably overnight.
  • Once chilled, pour the mixture into an ice cream maker and churn according to the manufacturer’s directions. It usually takes around 25 minutes. The ice cream will remain soft.
  • Transfer the ice cream into a freezer-safe container and place in the freezer for at least 4 hours or longer to harden. Serve with extra passion fruit pulp, if desired.

  5. I enjoy making my own ice cream but unfortunately I gave away my ice cream maker and now only make no-churn. I love your lavender version as that is one of my favorite herbs to grow as a cut flower and ingredient in recipes :)
