Hello everyone – I hope you’re doing well. After all, it’s Friday tomorrow, so we should be excited, right?

And I am excited, too. And not only about the weekend, but also our vacation we will have just in two weeks. I have always wanted to visit Newfoundland and Labrador, and fingers crossed – this is happening. (I mean everything was planned and booked in spring, but you never know what would be on someone’s way.) Definitely, I will be sharing some pictures and stories in September.

In a meantime, I am excite about this Papaya Prosciutto Salad.

Papaya Prosciutto Salad

This Papaya Prosciutto Salad is extremally easy to make with just a few ingredients. Despite the simplicity, it is packed with summer flavours and textures.

For this recipe, you will need fresh (ripe and juicy) papaya, prosciutto, red onions, and greens like arugula or spinach. The most consuming part is to lightly marinade the red onions, it takes about 15 minutes. For the marinade, you will need olive oil, lemon or lime juice, honey or maple syrup, herbs, and salt. Even though you will drain off most of the marinade, the onions will remain some of this delicious liquid. That’s why you don’t really need any dressing. If desired, you can always drizzle with a little bit of extra olive oil or lime.

And, of course, you can modify this recipe to your preferences. For instance, you can add some ripe avocados or cheese. I used feta, but other options include goat cheese or grated hard cheese (Think of smoked cheddar!) Either way, that will be so tasty. Serve it with some crusty bread, and you will have a wonderful lunch or dinner.

Papaya Prosciutto Salad

Ingredients

  • Marinated Onions:
  • 1 medium red onion, thinly sliced

  • 2 tbsp. lime or lemon juice

  • 2 tbsp. olive oil

  • 2 tbsp. maple syrup or honey

  • 1/4 tsp. salt

  • 1 tbsp. fresh oregano

  • 1/2 tsp. thyme

  • Papaya Prosciutto Salad:
  • about 1/2 fresh ripe medium-large papaya, cubed (2-3 cups cubed)

  • a handful of arugula or salad mix

  • 3-4 prosciutto slices, torn

  • 1/4 cup crumbled feta (or other cheese)

Directions

  • For the onions, in a small bowl combine the olive oil, lime (or lemon) juice, maple syrup (or honey), herbs, and salt, until dissolved. Stir in the sliced onion and mix to coat. You might want to add a bit of hot water if the mixture looks dry. Keep it for about 15 minutes to marinade, mixing two or three times.
  • When the onion is marinated, drain off most of the liquid (Don’t make it perfectly drained; the leftovers will work as a dressing.)
  • In a large bowl combine the papaya, onions, and salad greens. I didn’t use any dressing because the onions and papaya are juicy enough. Divide between serving plates and arrange the prosciutto. If desired, sprinkle with the feta or other cheese. Enjoy!

    Your salads are almost too pretty to eat! I think sweet fruit and salty prosciutto is a natural pairing-cheers to papaya.
