Blueberry Salad with Caramelized Almonds

Hello folks, how are you doing? I hope you had a nice productive week, and you are now ready for the weekend. Oh yeah, I am so much ready for it! Are you making anything special?

Personally, our sea buckthorn (also known as seaberry) plant is full of berries which need to be collected and turned into something delicious. By the way, please stay tuned. I have a few recipes I made last fall that I will be sharing here in September.

Blueberry Salad with Caramelized Almonds

This Blueberry Salad with Caramelized Almonds is super easy and quick to make. Made with just a bunch of [mostly seasonal] ingredients, it is delightful and fresh. The main components are blueberries, cucumbers, and fresh greens. I used the combination of arugula and our garden herbs like parsley and mint. For the dressing, I used a simple yet lovely combination of lemon juice and maple syrup (honey would work, too.) And you can go ahead and totally skip the maple syrup – especially if your blueberries are super sweet. Also, you can add some crumbled goat cheese or feta.

And, of course, the best part of this salad is the nuts! Slivered almonds get toasted first. Then you will need to add butter, maple syrup, and a pinch of salt and continue cooking them in the caramel-y mixture over the low heat. The result? Luscious, sticky, buttery, and sweet and salty nuts. They are so good that they could totally disappear before you add them in this salad!

This Blueberry Salad with Caramelized Almonds is a delicious and fresh summer dish. If you love sweet and salty salad combinations, then you should not miss this one!

Serves 2-3 as the main course or 4-6 as a side.

Ingredients

  • Caramelized Almonds:
  • 1/2 cup (50 gr.) slivered almonds

  • 1/2 tbsp. (7.5 gr. ) butter

  • 1 and 1/2 tbsp. (22 ml.) maple syrup

  • a pinch of salt

  • Blueberry Salad:
  • 1/2 English cucumber (or 1-2 small cucumbers), sliced

  • 1 cup (190 gr.) fresh blueberries

  • few handfuls of arugula

  • a few sprigs of assorted fresh herbs (such as mint, parsley, basil)

  • 1/3 cup (ab. 40-45 gr.) goat cheese or feta, crumbled

  • 1/2 tbsp. (7.5. ml.) lemon juice

  • 1/2 tbsp. (7.5. ml.) maple syrup

Directions

  • Place the almonds in a pan and toast over medium heat, tossing often, for about 3-4 minutes, until fragrant. Reduce heat to medium-low. Add the butter, maple syrup, and a pinch of salt to the pan. Allow butter to melt then cook for about 5 minutes, stirring often, until thickened and the almonds are golden and glossy. Off heat and transfer the nuts onto a plate and let them cool. Once cooled, break the almonds into clusters.
  • In a small bowl combine the maple syrup and lemon juice and whisk to combine (you can simply drizzle the salad with the ingredients without mixing them first.)
  • For a salad, in a bowl combine the blueberries, cucumbers, and greens. Drizzle with the dressing and mix to toss.
  • Divide the salad between the serving plates and garnish with the almond clusters and cheese. Enjoy right away!

    Oh my, Ben this salad sounds like such a glorious intoxication of flavors and textures! I simply LOVE the combination of sweet blueberries with greens and feta and you toss in those delicious caramelized almonds and that maple lemon dressing! I cannot wait to try this soon!
