I hope you are excited about fall and all the seasonal produce that it can offer. Today I am sharing my first recipe of this season. Are you familiar with sea buckthorns?
What Are Sea Buckthorns?
I think it would be safe to suggest that may not be familiar with sea buckthorns (especially considering that the majority of my readers are from the USA and Canada.)
Hippophae is the genus of sea buckthorns, deciduous shrubs in the family Elaeagnaceae. Other common names include sea berry (perhaps, the most common in North America), sandthorn, sallowthorn, and even Siberian pineapple (what a cool name!) They are plump, juicy bright orange berries, with a fresh, citrusy, acidic flavour. As you can probably guess, one of the distinctive characteristics of these shrubs are thorns. And they have many health benefits, too.
Last year, our sea buckthorns tree finally established and gave us first harvest. It was not a lot of berries, but it was enough to make a few recipes, including this Orange Sea Buckthorn Milkshake. This year we got much more of the berries, but I will share these recipes next year.
Orange Sea Buckthorn Milkshake
This milkshake is a breeze to make, and fun to enjoy!
You will need to extract the juice first. To make this, you need to combine berries with a bit of water and simmer for a few minutes, also mashing them. Then pass the berries though a mesh sieve / strainer. Now, you can make the milkshake.
Other ingredients include vanilla ice cream (of course), milk, and orange liquor such as triple sec. Optionally, you can add a squeeze of orange juice. And of course, orange-flavoured ice cream would be great in here, too.

Orange Sea Buckthorn Milkshake

Ingredients
- Sea Buckthorn Concentrate:
1/2 cup (about 75 gr.) sea buckthorns, fresh or frozen
1/4 cup (60 ml.) water
- Orange Sea Buckthorn Milkshake:
1 pint (about 400 gr. or 2 cups) vanilla or orange ice cream
1/4 cup (60 ml) or milk (1%, 2% or even skimmed will work) or more, depending on the desired consistency.
4 tbsp. (60 ml.) orange liquor such as triple sec
a squeeze of orange juice, optional
Directions
- Combine water with the sea buckthorns in a small saucepan. Bring to a boil, then reduce heat and simmer for about 7-10 minutes, mashing the berries to help them release juices. Off heat. Pass the berries through a fine mesh sieve, using a spoon to release as much juices as possible then discard the solids. You will have about 1/3 cup of the concentrate. You may not need all of it.
- In a meantime, let the ice cream sit out at room temperature until starting to soften, 10 to 15 minutes, for easy blending. In the meantime, chill the glasses in the fridge or even freezer.
- Place in the cup of your blender the sea buckthorn concentrate (starting with 2-3 tbsp.), milk, orange liquor, orange juice (if using) and soften ice cream.
- Blend until the milkshake is smooth and pourable, adding more of the sea buckthorn concentrate to thinner it up, as desired, for about 40-60 seconds. Also, you may add more orange liquor, if desired. Divide the milkshake between the chilled glasses, enjoy as desired and enjoy right away!
- If you have any leftovers of the sea buckthorn concentrate, keep in air-tight container or jar and keep refrigerated for up to a few days and use for other recipes.

I’ve heard that sea buckthorn is really healthy! I’ve never tasted it, but your milkshake looks really good. And of course your presentation is beautiful.
What a refreshing way to welcome autumn! they sound like such unique little gems with their vibrant color and tangy flavor.
So I haven’t heard of sea buckthorns before, but they sound delicious…and I love the color! Plus, I could go for a milkshake any day of the week, and this is a great excuse to make a seasonal shake!
