  • 2 oz. (60 ml.) Empress 1908 gin

  • 1/2 oz. (15 ml.) Lavender simple syrup or more, to taste

  • 1/2 oz (15 ml.) Rose syrup or more, to taste

  • 1/2 oz. (15 ml.) freshly squeezed lemon juice or more, to taste

  • a handful of ice cubes

  • lemon, lavender sprigs for garnish, optional

Directions

  • In a cocktail shaker, combine the Empress 1908 gin, lavender syrup, rose syrup, lemon juice, and ice. Shake vigorously for about 20–30 seconds, until well chilled. Taste and adjust the balance if needed by adding a little more gin, syrup, or lemon juice. Strain into a chilled glass for a stronger serve, or pour over fresh ice for a lighter version as the ice slowly melts. Garnish with a lemon slice or a lavender sprig, if desired, and serve immediately.

Notes

  • If fresh rose petals are unavailable, dried rose petals can be used instead. Because they are more concentrated, you’ll need a smaller amount—about 2–3 tablespoons for the same quantity of water. Alternatively, you can prepare a simple syrup and flavour it with a few drops of rose water (not rose essence), adjusting to taste.
