Empress 1908 Indigo Gin
Are you familiar with the Canadian Empress 1908 Gin? (Note: this post is not sponsored.) Empress 1908 Gin is created by Victoria Distillers and inspired by the Fairmont Empress Hotel in Victoria, British Columbia. It has a beautiful indigo colour thanks to the addition of butterfly pea extract. Its taste is smooth and delicate with the notes from citrus, herbs, flowers, and spices.
It has a beautiful indigo colour. But once you mix it up with other liquors or juices (Particularly citrus juice), it will change the colour. The hues will vary depending on the pairing – different purple and pink hues from light lavender to vibrant fuchsia.
Empress 1908 Gin pairs wonderfully with all fruity and herbal things especially citrus fruit, lavender, and many other. If you have a chance to try it, I would recommend. (And please check this Lilac Empress 1908 Cocktail).

But today I am going with a classic pairing. Gin & Tonic!
To be absolutely honest, I am not a huge fan of this combination. And neither is Andrew. But I just couldn’t miss this cocktail. Mostly because it’s just so beautiful.
For this cocktail, you will need only three ingredients: Empress 1908 Gin, good quality tonic water, and a slice of lemon, lime or grapefruit (Grapefruit is a traditional garnish). And, of course, ice. Simply mix and enjoy! And be fascinated by its colour. You can also add a few drops of citrus juice and watch the colour slightly change.
Certainly, if you don’t have Empress 1908 Gin, you can use any other gin of your choice, either indigo or traditional.

Ingredients
2 oz. Empress 1908 Indigo Gin
3 oz. tonic water
ice cubes, crushed
two slices of grapefruit, lemon or lime
Directions
- Fill a glass with ice, add Empress 1908 Gin, then top with tonic. Garnish with a grapefruit (lime or lemon) slice. Enjoy!

I actually had one of these at the Empress Hotel before it became a Fairmont Hotel – though not a fan of G&T either, I was lured in by the color. And I loved it for that alone. Now I wonder if the Empress Indigo Gin is available here… (I also had tea there – which then was lovely and reasonable. Now it is a zoo and outrageously expensive.)
