Prepare the Lemonade

In a pitcher, combine 1 cup of the blueberry concentrate with lemon or lime juice and water. Stir well to combine.

Taste and adjust with more maple syrup or citrus juice as needed. Serve over ice and garnish with fresh mint.

Ingredients

  • Blueberry Maple Concentrate:
  • 5 cups (about 750 gr) frozen blueberries thawed and drained (See Notes)

  • 1/2 cup (120 ml) maple syrup

  • 1 tbsp (15 ml) lime or lemon juice

  • Blueberry Maple Lemonade:
  • 1 cup (240 ml) Blueberry Maple concentrate

  • 1/3 cup (80 ml) lemon or lime juice

  • 4 cups (1000 ml) water

  • more maple syrup, if needed

  • fresh mint

  • ice

Directions

  • Blueberry Maple Concentrate:
  • Make sure to thaw the blueberries in advance (overnight) and drain from the excessive liquid (don’t get rid of all of it.)
  • In a pot combine the blueberries, maple syrup, and lemon juice. Bring to a boil and cook for 5 minutes. Then reduce heat and simmer for 25-30 minutes to reduce in volume. Remove from heat and let the concentrate completely cool.
  • Blueberry Maple Concentrate:
  • To make lemonade, combine 1 cup of the concentrate (you may choose to pass the mixture through a fine sieve mash, but I did not do this.) with water, lime or lemon juice, and mint. Adjust flavour to your liking by adding more of the concentrate, maple syrup, or lime juice. Chill for an hour to infuse even further (although can be enjoyed right away!) then serve with ice and enjoy!

Notes

  • You can keep all the liquid after thawing the blueberries – it’s quite flavourful when reduced. But in this case, it will take longer to cook down the concentrate, about 30-45 minutes or longer.

  5. I just love the colour of this blueberry lemonade but half a cup of maple syrup seems like a lot, I don’t love a sweet drink. It is a lovely colour though.

    • Hi Eva, I agree – I don’t like too sweet drinks (nor desserts) either. But I would not call this lemonade overly sweet. Maple syrup is not as potent as other sweeteners in my book. Besides, frozen berries and fruit tend to seem less sweet in my opinion. But again, that can always be tweaked for anyone’s taste (i.e., less syrup, more citrus juice, etc.) :)
