Ingredients

  • 2-3 ripe but firm persimmons (e.g. Fuyu) – about 250-300 g. total

  • 1/2 to 2/3 cup (60-80 g) walnuts, toasted

  • 1/3 to 1/2 cup (60-80 g) pomegranate arils

  • 2-3 cups (60-90 g) arugula

  • 1-2 small thyme sprigs – leaves picked

  • 1 tbsp. (20 g.) honey

  • 1 tbsp. (15 ml) lemon juice
    or slightly more, for added freshness, especially if persimmons are very sweet

  • salt and pepper, to taste

Directions

  • In a small bowl whisk together the honey, lemon, thyme, and a little of salt and pepper.
  • In a larger bowl, combine the arugula, sliced persimmons, pomegranate arils, and toasted walnuts.
  • Pour the dressing over the salad and toss gently to coat. Try and adjust the seasoning (salt, pepper, lemon, or honey) and serve. Enjoy!

Please do not make fun of me when I say this… but I never tried persimmons before, I just never knew how to eat it. I do like fruits in salad, so I need to give it a try.
