And I also hope you are ready for the weekend. Oh yeah, I am ready 100%. Who am I lying to anyway? I was ready on Monday at 7am!

Apple Cranberry Walnut Salad

This Apple Cranberry Walnut Salad is a perfect dish for holidays! While festivity is often about hearty, starchy, and comforting foods, we should not forget about something light and healthy. After all, everything is about a good balance, right?

Besides, this recipe proves that a festive dish does not have to be too heavy. (Which means more space for cookies and boozy drinks!)

This salad is packed with a ton of different flavours and textures. Crisp and juicy apples, nutty walnuts, chewy dried cranberries, and a little fresh cranberries, for a contrast.

And the dressing is lovely, too! Made with brandy (yes, brandy!), orange juice, maple syrup, ginger, and fresh herbs like rosemary and thyme, it is so fresh and cozy. Doesn’t it scream “winter” and “holidays”?

This Apple Cranberry Walnut Salad with ginger maple dressing is light, refreshing, and packed with different textures. And the seasonal ingredients and festive vibe make it also perfect for the holiday season!
Serves 2 as main dish or more as a side.

Ingredients

  • Apple Cranberry Walnut Salad:
  • 2 large apples, preferably crisp and sweet & tart, cubed or sliced

  • 1/3 cup (about 40 gr.) dried cranberries

  • 1/4 cup (about 40 gr.) fresh cranberries, sliced or cut in half

  • 1/2 cup (about 50 gr.) walnut halves, toasted, roughly chopped

  • a few handfuls of arugula

  • Brandy Ginger Maple Dressing:
  • 1 tbsp. (14 ml.) olive oil

  • 1/2 tbsp. (7 ml.) maple syrup

  • 1/2 tbsp. (7 ml.) brandy

  • a few good squeezes of orange or lemon juice

  • a small piece (about 20-25 gr.) ginger – or 1/4 tsp. dried

  • 1/2 tsp. fresh minced rosemary and thyme, each

  • a pinch of salt

Directions

  • For the dressing, using a fine grater, grate the ginger, then squeeze the juice to a small bowl; discard the solids. Add the olive oil, brandy, maple syrup, orange or lemon juice, herbs, and salt. Whisk to combine. Set aside.
  • For the salad, in a large-medium bowl, combine the apples, both cranberries, walnuts, and arugula. Add the dressing and toss to coat. You can enjoy it right away, but it will also stay fresh when refrigerated for up to a few hours.

    Oh this sounds fantastic, Ben! I love how you incorporated all of the traditional fall flavors into this recipe…but it’s still on the lighter side. This is a great way to balance out the heavier side dishes that come along with Thanksgiving!

    I like the sound of that dressing Ben. Tho we are sweltering away here with high humidity and storms! We had a storm with 200,ooo lightning strikes last night!! And over 1 million in 24 hours over australia. Who knows what’s to come this summer? Eek. Anyway you salad sounds lovely.

    YUM!! I’m making this for Thanksgiving, even if I’m the only one who will eat cranberries and walnuts. Maybe my oldest son will indulge—he has to cook for himself so he will usually try new things. Have a great week!
