Hello, everyone! How are you doing? Are you sick and tired of all the sweets? Perhaps, sugar coma? Answering these questions myself, we definitely look forward to having a few lighter meals over the next couple of days.
Holiday Season Isn’t Over Yet!
I hope you had a wonderful and cozy holiday time. However, while Christmas might be over, the holiday season isn’t yet.
Unlike many people who don’t really celebrate a New Year’s Eve, it’s quite important in our house (Because that’s a good excuse to enjoy more of delicious food lol.) Indeed, we officially wrap the holiday season up on January 2nd which is Andrew’s birthday. Yay to the extended holidays!
That being said, we always have dessert for a New Year’s Eve celebration. Certainly, we do not make any other cookies (We won’t be simply able to look at them for the time being. Who can relate?) Usually, we enjoy some easy and quick recipes like a tiramisu or chocolate truffles. By the way, you might like this Irish Cream Tiramisu, these Irish Cream Truffles, or these Coffee Kahlua Truffles. Oh year, we love some good boozy desserts. They are just so perfect for this occasion, don’t you think so?

Talking about boozy desserts, you will love this Irish Cream Chocolate Dessert. Honestly, I cannot classify the category this dessert falls into. It is not a mousse as it’s not enough light and airy. A no-bake cheesecake? Yup, perhaps. Well, it does not matter as long as it delicious. And you cannot go wrong with chocolate, cream cheese, and Irish cream. It’s moderately sweet, lightly salty, and with a distinctive Irish Cream flavour. Importantly, it’s made in just less than 30 minutes plus the chilling time. What can you ask more for a fabulous New Year’s Eve dessert?

Irish Cream Chocolate Dessert

Ingredients
~ 200 gr. dark or semi-dark chocolate (Use milk chocolate if desired), roughly chopped
5 tbsp. heavy (whipping) cream
400 gr. cream cheese, room temperature
~ 1/2 cup Irish cream, less or more, to taste
more chocolate, for garnish
Directions
- Combine the chocolate and cream and melt over low-medium heat, stirring, until smooth. Cool for about 15 minutes.
- Using an electric mixer, beat the cream cheese 1 minute.
- Add the cooled melted chocolate and continue whipping for about 2 minutes.
- Stir in the Irish cream and beat until just incorporated, 30 seconds or so. Try and add more Irish cream, if desired. Also, you might want to adjust the sweetness – simply add some powdered sugar and mix until well-combined.
- Divide between serving glasses. Chill for at least 30 minutes or longer. Garnish with some extra chocolate, if desired. Enjoy!
