This grapefruit and rose tonic is simple, yet it has a surprisingly complex flavour profile. Fresh grapefruit and classic tonic water provide plenty of bitterness, while sweet and aromatic rose syrup softens those sharper notes.

A Floral Mocktail That Is Not Too Sweet

Rose syrup can easily make a drink quite sweet, particularly when paired with other sweet ingredients. However, this rose syrup mocktail has two elements that help keep the sweetness under control.

  • Tonic water contributes another layer of bitterness from quinine.
  • Rose syrup provides sweetness and a distinctive floral aroma.

Grapefruit and rose may not be the most obvious pairing. However, they complement each other beautifully in this grapefruit drink with tonic water.

However, you can adjust the mixer depending on the flavour profile you prefer:

  • Classic tonic water gives the grapefruit tonic its strongest bittersweet character and is my preferred option.
  • Light tonic water works if you prefer a somewhat softer and lighter profile.
  • Mild tonic water can also work, although the contrast between bitter tonic and sweet rose will be less pronounced.
  • Sparkling water or club soda is an option if you do not enjoy tonic. However, the result will taste lighter and less bitter, making it closer to a grapefruit and rose soda than a true grapefruit tonic.

I would avoid strongly flavoured tonic waters here. Grapefruit and rose already provide plenty of character, so a simple tonic lets both flavours shine.

How to Make Grapefruit Tonic with Rose Syrup

This grapefruit mocktail could hardly be easier to make. You do not need a cocktail shaker or any special equipment.

Fill a serving glass generously with ice. Add the fresh grapefruit juice and rose syrup, then gently stir to combine. Top with well-chilled tonic water and give the drink another gentle stir.

Taste and add a little more rose syrup if you prefer a sweeter or more pronounced floral flavour. Garnish your grapefruit tonic mocktail with fresh mint, a slice of grapefruit or orange, and dried rosebuds or petals, if desired. Serve immediately while cold and fizzy.

Possible Additions and Variations

This grapefruit drink with tonic water and rose syrup is delicious as written. However, its simple base also makes it easy to customize.

  • Make it lightly alcoholic. Add 15–30 ml (1/2–1 oz) of gin. Its botanical notes work particularly well with grapefruit, rose, and tonic.
