Today I am sharing another super easy summer drink. In fact, you only need lavender syrup and tonic water to make it, although a little citrus is a lovely optional addition. Sweet and aromatic lavender works particularly well against the characteristic bitterness of tonic. As a result, this simple lavender syrup drink is floral and refreshing without being overly delicate. So, let’s dive into!

A Refreshing Lavender Tonic Water Drink

This tonic mocktail proves that you do not need many ingredients to make an interesting drink. The contrast between sweet floral syrup and bitter tonic creates plenty of flavour on its own.

Floral, Bittersweet, and Refreshing

This floral tonic has a simple yet distinctive flavour profile. Lavender syrup provides a fragrant, slightly herbaceous character, while tonic water balances it with bitterness.

  • Floral and aromatic. Lavender syrup gives this tonic water drink its distinctive aroma and flavour.
  • Pleasantly bitter. Quinine in tonic water offsets the sweetness of the syrup.
  • Not too heavy. Plenty of ice and carbonation keep this lavender summer drink light and refreshing.
  • Easy to balance. A little fresh citrus can brighten the drink and cut through extra sweetness when needed.

The exact balance will also depend on your lavender syrup. Therefore, it is always best to start with a moderate amount and adjust the drink to your taste.

Why Lavender Syrup and Tonic Work Together

Lavender syrup is delicious, but its floral sweetness can become quite pronounced when paired with a neutral mixer. Tonic water provides a stronger contrast.

Its characteristic bitterness balances both the sugar and floral aroma. At the same time, the bubbles keep this lavender tonic lively and refreshing. The result is more complex than a simple lavender soda while remaining exceptionally easy to make.

An Easy Two-Ingredient Summer Drink

You will need only two essential ingredients for this lavender drink with tonic water. Everything else is optional.

Ingredients You’ll Need for Lavender Tonic

You will need only lavender syrup and tonic water for this lavender tonic, plus plenty of ice. Citrus and fresh lavender are optional.

  • Tonic water. A classic bitter tonic works particularly well. I used Schweppes, but another traditional tonic water will work too. A lighter tonic is also an option if you prefer a softer bitterness.
  • Ice. Use plenty of ice and make sure the tonic is well chilled before assembling the drink.
  • Citrus, optional. Lemon or lime juice adds acidity and can be particularly useful for balancing a sweeter lavender syrup. You can also simply use citrus slices or wedges as a garnish.
  • Fresh lavender, optional. A small sprig makes a beautiful garnish and reinforces the floral character of this easy tonic water drink.

What Lavender Syrup Should I Use?

Homemade lavender syrup is my preferred choice for this tonic with lavender syrup. Most importantly, making your own allows you to control both the sweetness and the intensity of the lavender flavour.

Store-bought syrup works perfectly well, too. However, commercial lavender syrups can be quite sweet and concentrated. Start with a smaller amount if necessary, then add more to taste.

If your floral tonic water drink becomes sweeter than you would like, add a squeeze of fresh lemon or lime juice. The extra acidity helps restore the balance without masking the lavender.

How to Make Lavender-Infused Tonic

This lavender tonic takes only a couple of minutes to make. Fill a serving glass generously with ice, then add the lavender syrup. Top with well-chilled tonic water and gently stir to combine.

Taste your lavender syrup drink and adjust the syrup if necessary. If it tastes a little too sweet, add a squeeze of fresh lemon or lime juice. Garnish with citrus and fresh lavender, if desired, and serve immediately.

Possible Additions and Variations

This simple lavender tonic water needs little else. Still, you can easily adjust it depending on your preferred balance of sweet, bitter, floral, and citrus flavours.

  • Add lemon. A squeeze of fresh lemon juice makes the drink brighter and sharper while balancing sweeter lavender syrup.
  • Try lime. Lime provides a slightly different, zippier citrus profile that also works beautifully with tonic.
  • Keep citrus subtle. Instead of adding juice, simply garnish the lavender tonic with a lemon, lime, or orange slice.
  • Make it more floral. Add a little more lavender syrup to taste, particularly if you are using a lightly sweetened homemade syrup.
  • Add gin. For an alcoholic variation, a small amount of gin naturally complements both lavender and tonic.
  • Use sparkling water. If you dislike tonic’s bitterness, sparkling water or club soda will work. However, the result will be closer to a lavender soda than a true floral tonic.
