What is Earl Grey?
Earl Grey tea is a black tea infused with a citrus fruit, bergamot.
Bergamot is known for its aromatic and fragrant zest that is often used for flavouring. It’s commonly used to flavour beverages, cakes, cookies, and even some savoury foods. It has a complex aroma that is slightly citrusy, floral, and spicy, with a subtle bitterness.
Earl Grey tea has a robust aroma coming from black tea leaves and Bergamot with its zesty notes resembling the mix of oranges, grapefruits, and limes. It also has floral undertones, with hints of rose and lavender.

To make this Earl Grey Lavender Cocktail, you will need the following ingredients:
- Rum works as the base spirit in this recipe. You will need light, white rum for this recipe. Dark or spiced rum are not the best options, but I believe they will work, too. If you don’t like or have rum, vodka or gin should work just fine; if going with gin, try picking a more neutral, less juniper-forward flavour.
- Earl Grey tea bags – for a Earl Grey Lavender syrup (concentrate). Decaffeinated tea will also perfectly work.
- Dried culinary lavender buds – for the concentrate. Be sure to use food-grade lavender.
- Honey – for sweetening the concentrate. Be sure to add it at the end to avoid boiling as it could damage the nutritional and medicinal properties of honey.
- Lemon – for added freshness.
The flavour profile of this cocktail is complex. It’s citrusy and fresh, floral, and with a pleasant hint of honey. I would not call it super refreshing, but it’s an excellent choice your an after-dinner drink.
