Hey folks, how are you doing? Did you enjoy the weekend (or the extended weekend if you live in country that celebrates Labour Day?) And most importantly, if you are a food blogger, are you moving on from summer recipes to apples and pumpkins?

I am almost here, too. My next recipe would be something that I’d call perfect for late summer or early fall. And I am also planning to have one or two posts on our Croatian trip in May; I think that would be a perfect farewell to summer.

But in a meantime, I am going to share one more summer recipe – Crêpes with Mojito Sauce, if you don’t mind.

Crêpes with Mojito Sauce

You probably know my love for crêpes. And you are most likely aware of my love to cook with alcohol. Especially crepes with boozy sauces.

The recipe itself is super-duper easy. Basically, you will need to cook some butter with mint, maple syrup, sugar, and lime juice until resembles syrupy consistency. Then add a generous amount of rum – and voila! It’s reach and fresh at the same time.

Crêpes with Mojito Sauce where crêpes are combined with a luscious sauce made with rum, lime, and lots of mint.

Ingredients

  • Crêpes:
  • 1/2 of the batter from Crêpes (Basic French Crêpes) or your favourite recipe; this sauce will be enough for about 8-10 crepes.

  • Mojito Sauce:

  • 6 tbsp. (85 gr.) unsalted butter

  • 1/3 cup (~110 ml.) maple syrup

  • 4 tbsp. (50 gr.) light brown sugar

  • a pinch of salt

  • zest of 1 or 2 limes

  • 1/2 cup freshly squeezed lime juice (4-5 limes)

  • a generous bunch of mint leaves – about 1 1/2 cups or 45 gr.

  • 1/2 cup of rum

  • 1 tsp. vanilla extract

  • more lime zest, lime slices, and mint for garnish

Directions

  • Crêpes:
  • Make crepes as per from this recipe Crêpes (Basic French Crêpes); you will need to make 1/2 of batter as this sauce will be enough for ~8-10 crepes. Or you can make the entire batch and use leftover crepes for other recipes.
  • Mojito Sauce:
  • In a large heavy-bottomed pan combine over medium heat the butter, maple syrup, salt, and sugar. Let the butter melt then let the mixture lightly bubble for 2-3 minutes to thicken it up a bit.
  • Add the lime juice, zest, and mint. Reduce heat to low and simmer for about 10-12 minutes, stirring occasionally.
  • Increase heat to high medium. Stir in the rum and vanilla, simmer for just 40-45 seconds, then off heat. Let the sauce stand for about 15 minutes to infuse it more. Then remove and discard the mint leaves Try and adjust the sauce flavours – i.e., adding more lime, sweetener, or even rum.
  • For serving you will have two options. First, you can fold the crepes, drop them onto the pan with the sauce, and heat them over high medium heat for 1-2 minutes. Alternatively, you can serve the sauce separately and drizzle as desired. When serving, garnish as desired – some of options include lime, zest, and mint. Enjoy!
