Crêpes with Lavender Citrus Sauce
As you can see from the list above, there are another crepes with lavender and lemon. While the idea is similar, the recipes are different. If you prefer something sweet, rich, and decadent, try these Lavender lemon Crêpes. But if you are into something lighter and fresher, this new recipe is for you.
Also, it’s ultra simple. You will need just a few ingredients for the sauce – maple syrup, butter, dried lavender buds, citrus juice (I used the combo of lemon and lime, but you can also mix it up orange or grapefruit. Or choose one juice. But with two or more the taste would be more complex and interesting.) And don’t worry about the amount of maple syrup. The sauce won’t be too sweet! And while optional, I would also recommend to add rum or other strong spirit like whiskey, bourbon or even Triple sec. It will help balance out the sweetness and sourness!

Crêpes with Lavender Citrus Sauce

hourCrêpes with Lavender Citrus Sauce are an easy but scrumptious dessert. The sauce is sweet and sour, boozy, and with delicate floral notes. The sauce will be enough for at least 10 crepes.
Ingredients
about 12 crêpes, this or your favourite recipe
1 and 1/2 cup maple syrup
2/3 cup citrus juice (here the combination of lemon and lime)
100 gr. butter
2/3 to 1 tbsp. dried lavender buds (2/3 for a very subtle aroma, 1 for a stronger yet still delicate aroma; you can even increase to 1 and 1/2 tbsp. if you like well-pronounced aroma)
1/4 to 1/3 cup of rum or other strong alcohol (whiskey, bourbon, Triple sec, etc.)
Directions
- In a large pan combine the maple syrup with lavender and cook over medium heat for about 7-9 minutes, to infuse. Using a slotted spoon or sieve remove and discard the lavender.
- Add the butter to the pan and melt, one minute.
- Stir in the citrus juice. Cook over high medium, stirring occasionally, for about 10 minutes, until slightly thickened and reduced in volume. Try and adjust the flavour, if necessary, by adding more maple syrup, juice or even lavender.
- Stir in the alcohol and let it simmer just for about 40 seconds. Off heat and cool – you can serve crepes with the warm or room temperature syrup. (Slightly warm syrup would be my favourite way.)
- You can serve these crepes different ways. You can fold them and soak in the syrup for 20-40 seconds or simply serve the syrup differently and drizzle the crepes as desired. Enjoy!
