Hey everyone. That’s correct – I am reposting my blog post shared two days ago. If you had a chance to read it, I was talking about the technical issues of my blog I had been having this week. And here we go again. I needed to ask my server to run the last backup version; however, it did not include the last post. Indeed, I am fully taking my responsibility this time as I was doing few things I should have done without backing up. But you know me – I hate all these technical nuances, and I just want to share creative content without worrying about breaking the site :)
Also, I wanted to thank you the folks left their comments on that previous post. I read them all, but naturally I won’t be able to response you this time!
Maple Blueberry Crêpes
Anyway, I would have hated not having these Maple Blueberry Crêpes on the blog. But I also don’t want to spend too much time on the post, so it’s short version.
And if shortly, these Maple Blueberry Crêpes are terrific! Too short, eh?
I mean, imagine a luscious blueberry sauce bursting with flavour. Maple syrup adds sweetness and those autumn vibes (Even though we enjoyed the crepes back in June. See the lilacs? lol) Lemon adds freshness and balances out the sweetness. And bourbon what about it? It’s always great. You won’t feel it much here, but there’s something warming and cozy about this addition.

Maple Blueberry Crêpes

minutesDo you like serving your crepes with maple syrup? Berries? Lemon? Try these luscious Maple Blueberry Crêpes with the addition of bourbon, then! The sauce is enough for 8-10 crepes. The cooking time does not include time for making crepes.
Ingredients
8-10 crêpes, this or your favourite recipe
3 tbsp. butter
1/2 cup maple syrup
few drops of maple flavour (optional)
about 2 and 1/2 cups frozen blueberries
1/3 cup bourbon or whiskey
juice of 1 lemon, or more to taste
zest of 1/2 lemon
a pinch of salt
Directions
- In a pan, combine the butter and maple syrup and let it simmer over medium heat for about 2 minutes, to thicken.
- Add the frozen blueberries, lemon, and salt and simmer for 5-7 minutes, until the berries are soft but not too mushy.
- Add the bourbon or whiskey and cook just for 40 seconds. The sauce will remain quite thin, so you can optionally add some starch or pectin, to thick it up.
- Serve hot or warm, with crepes. This sauce should be enough for 8-10 crepes. If you have any sauce leftovers, you can use it on a toast, over ice cream, and even as a sauce to you meat. Enjoy!
