Hello everyone! Happy Bruschetta time. Oh I certainly meant happy Wednesday!
Bruschetta Time!
But I am not too wrong about bruschetta. That’s one of my favourite thing to enjoy in summer. Indeed, I could easily live on bruschetta (along with salads, cheese, fruit, veggies, and ice cream) for the entire summer. Who is with me? (Okay Daisy insists that prosciutto and scallops should be in this list, too. Noted haha!)
Anyway, I have many bruschetta and crostini ideas on this blog to suit anyone’s taste. If you like savoury things, you would probably like this Sun-Dried Tomato Eggplant Bruschetta or this Charred Corn Sweet Pepper Crostini. Sweet and savoury combination lovers? I’ve got many delicious ideas! What about this Rhubarb Honey Cardamom Crostini or this Whipped Feta Blueberry Crostini?
Smashed Blackberry Bruschetta
Now, who is excited about this Smashed Blackberry Bruschetta? It’s fresh, luscious, and quite beautiful! Also, it’s a breeze to make. Basically, we are going to slightly mash the fresh blackberries and combine them with honey, thyme, and lemon zest. So easy yet absolutely scrumptious and elegant.
Also, bruschetta is usually made with some rustic bread rather than with baguette. However, I used not just any baguette – a homemade sourdough baguette for this recipe, so it’s perfectly appropriate. Oh man, that sourdough baguette was so good! But you can use any bread of your choice, of course. I just personally think that baguette-kind of bread looks nifty when paired with delicate toppings.

Smashed Blackberry Bruschetta

Ingredients
Sourdough Baguette (or other bread), 7-9 slices
1/3 cup goat’s cheese
2/3 cup fresh blackberries
1 tsp. honey
1/2 tsp. fresh thyme
1/4 tsp. grated lemon or lime zest
Directions
- In a small bowl place the blackberries and lightly smash them with a fork or spoon. Add the honey, lemon zest, and thyme.
- Slightly toast the bread, if necessary.
- Spread the goat’s cheese over the bread. Place a spoon or so of the blackberries, with the juices. Enjoy immediately!

What a fun idea! I love blackberries, but I’ve never used them in a sweet + savory bruschetta recipe. This sounds perfect for a summer appetizer with a glass of white wine! We make tomato bruschetta with fresh mozzarella all the time, but now I want to mix it up and try this blackberry + goat cheese version.
