Hello everyone! How are you doing? Enjoying the spring, let me guess? So we are, kind of. We are expecting a freezing rain tomorrow night. Sounds like a cliché which you hear on this blog often this year, right? What can I say – our Canadian spring! lol
Anyway, another week – another healthy and tasty salad. With beetroots, this time.
If you love beetroots – and I am a huge fan of them – you can find many recipes here. Yet all these recipes use pre-cooked beets while this one calls for raw. Have you tried raw beetroots? They are delicious; however, occasionally they could taste a tad astringent (causing a lingering sensation similar to when you bite a not fully ripe persimmon.) It is totally safe to eat uncooked beets, though. In fact, unless they are dry and not sweet enough, they are even more delicious!
As always, please remember, that people with certain medical conditions (i.e., high blood sugar, blood pressure, some stomach and kidney conditions, etc.) – whether enjoying cooked or raw beets – should enjoy them in moderation. Or even better, consult to your doctor!
Raw Beet Salad
This Raw Beet Salad is super easy to whip up. Just simply peel and shred the beets using a grater or even a food processor. Then season them with some olive oil, apple cider (or balsamic) vinegar, salt, and pepper. If your beets are not too sweet, you can also add a little of honey or maple syrup. I used fresh parsley, but dill, thyme, and oregano will equally work. You can swap pumpkin seeds for other seeds or nuts; think of toasted walnuts, pine nuts, or sunflower seeds. Also, you can add a shredded (grated) apple for the added sweetness and juiciness. Easy but versatile and delicious!

What an absolutely gorgeous salad, such a colourful treat. I’m sure you’re having really awful stormy weather as we are in Toronto and this type of food really brings the happiness back. I love uncooked beets too, just have to remember what the result is the next day, I always scare myself a bit!!! The addition of the pumpkin seeds are a nice textural contrast.
Interesting! I don’t think I’ve ever seen raw beets in a salad like this. What a fun idea. I’m personally not a fan of beets, but Laura does love them. I could also see a few pieces of shredded beets working well as a garnish on a leafy salad…or perhaps soup!? Good idea! And freezing rain!? It’s too late in the year for that!!
