Peanut Butter Dulce de Leche Oatmeal Balls

Hello, folks! I hope all had a great restful weekend and you are ready for a new week.

And if you need something sweet and indulgent to help you survive this week, I’ve got this exciting recipe for you.

After all, in my previous post, I promised that you would see several dulce de leche recipes over the next two weeks. So, here we are. Ladies and gentlemen, please welcome these awesome Peanut Butter Dulce de Leche Oatmeal Balls!

Dulce de Leche and Peanut Butter

Did you know peanut butter and dulce de leche go wonderfully together? My friends, in my humble opinion, these two tasty ingredients are a match made in heaven. Both are rich and creamy and also peanut butter nicely balances out the sweetness of dulce de leche. And as always, when making any dessert, please don’t forget a good pinch of salt.

Peanut Butter Dulce de Leche Oatmeal Balls

I believe many of you have made or had peanut butter oatmeal balls at least once. If you like this kind of treat, you will love these Peanut Butter Dulce de Leche Oatmeal Balls, too. They are utterly rich and decadent. They offer you the healthy benefits of oats and peanut butter, while dulce de leche adds sweetness and lifts them to a different, indulgent level. But please don’t worry because they are not overly sweet.

They are easy to make, too. You need to combine oats, peanut butter, dulce de leche, vanilla, and salt. Depending on the consistency of your peanut butter and dulce de leche, you may need to add a splash of milk or even water.

Flavour and Texture Profile

Most recipes suggest you simply combine the ingredients. But I am offering an additional step – quickly toasting your oats first. This will bring up the flavour by adding the extra nuttiness from toasted oats.

As for the texture, I used rolled oats, so these balls are really chewy. If you prefer less chewy treats, you can swap for quick oats. Alternatively, you can grind oats slightly using a regular or immersion blender.

Ingredients

  • 2 cups (165 g) rolled oats

  • 1/2 cup (125 g.) peanut butter of your choice; I used smooth – you may need a little more

  • 1/2 cup (150 g.) dulce de leche – you may need a little more

  • 1 tsp. (5.5 ml.) vanilla extract

  • a good pinch of salt

  • you may need a little splash of milk or water

Directions

  • Place the oats onto a pan over high-low to medium heat and toast, stirring often, for about 5 minutes, until nutty aroma. This is an optional step, but it will bring up a more complex and nutty flavour.
  • In a microwave-safe bowl or stovetop, combine the peanut butter with dulce de leche. Heat until warm and slightly melted. Stie in the salt and vanilla.
  • Combine the wet mixture with the oats. The mixture should remain slightly sticky and wet. If it still looks dry, you can add a little splash of milk, water, peanut butter, or dulce de leche. Cover and refrigerate the mixture for about 20 minutes to firm up.
  • Remove from the fridge and shape balls. Depending on the size, you should get between 14 to 20 ball. Keep them refrigerated. When refrigerated, they firm up. If prefer to enjoy softened balls, let them stay at room temperature for 15 minutes or so. Enjoy!
