Hello, folks! How are you doing? I hope you all are having a great week and getting ready for the weekend. Can you also believe it’s the last day of April? I cannot, really.

Last time, I shared a recipe for a quick and easy method of making infused lilac sugar. Unlike the traditional method that requires to infuse sugar for up to one week, the express method allows you to use it in less than one day. And today, I am sharing a recipe for these tasty cookies with a delicate floral aroma.

Lilac Sugar Shortbread Cookies

Here on this blog, there is another recipe for Lilac Shortbread Cookies I posted in 2021. But that recipe uses a different method by infusing butter and requires longer prep and cooking time.

Lilac Sugar Shortbread Cookies are way faster to make, of course, given that you have already made lilac sugar. This is a simple shortbread dough requiring only several ingredients – butter, flour, lilac sugar, salt, and vanilla. And this dough does not require a mixer or long chilling, either.

These cookies have a lovely subtle floral (not too lilac-pronounced) aroma. And as you use sugar in both dough and for sprinkling the top, the flavour is even brighter than the other recipe offers. I sprinkled sugar on top as I did not want overly sweet cookies, but you can surely roll the entire cookie in it. Just be sure to watch your oven, so it won’t burn.

Ingredients

  • 170 g. (3/4 cup) butter

  • 200 g. (1 cup and 2 tbsp.) all-purpose flour

  • 4 tbsp. (60 g.) lilac-infused sugar

  • a small pinch of salt

  • 1 tsp. (5.5 ml.) vanilla extract

  • 2 tbsp. (30 g.) lilac-infused sugar, for sprinkling

Directions

  • Cut the butter into few large pieces, place in a microwave-safe bowl, and heat for about 25-40 seconds or until very soft (partly melted); or melt a small saucepan over stovetop heat.
  • Combine the soften/melted butter with the lilac sugar, vanilla, and salt. Beat with a wooden spoon for 30 seconds until well-incorporated.
  • Stir in the flour and starch and mix until remains dough; don’t overmix. If the dough looks a little too dry or crumbly (that happens as density of ingredients could wary), you can easily fix it by adding a little (1-2 tsp. or 5-10 ml.) of milk or water.
  • You do not need to refrigerate the dough, but if you have time, giving it 5-10 minutes to rest in the fridge will improve the texture even more. 
  • Preheat oven to 350 degrees F (~175 degrees C). Line a baking sheet with parchment paper.
  • Roll the dough out with a rolling-pin (if the dough feels too moist, sprinkle the surface and the dough with a little of flour; just don’t use too much as cookies could turn more tough. Cut cookies using cookies cutters or simply with a knife.
  • Gently transfer cookies to a parchment-lined baking sheet. Using a dessert spoon, sprinkle with a little lilac sugar on top and slightly press it into the dough with your hand or a spatula.
  • Bake for about 10-12 minutes (depending on size and your preference) or until the edges are slightly golden. If you prefer delicate, moist, and soft cookies, bake them about 10 minutes, depending on their size, thickness, and your oven. If you prefer them crisp and more browned, bake them for extra 2-3 minutes or so. Either way, they will be delicious! Enjoy!
