Hello everyone – happy Monday! I hope you had a wonderful weekend, and you’re ready to start new week off right. Indeed, this recipe would fill the bill; it’s heathy yet offers something special.
Lilac Love
But first I need announce something important. I am all about lilac recipes! Yes, that’s correct. In case you’ve missed my previous posts, I already shared this Lilac Syrup and Lilac Martini Vermouth Cocktail. Oh yeah, that boozy cocktail is fabulous, you should give it a try! In fact, I have a couple of lovely ideas more. Luckily, the lilac season in our area is almost over, otherwise, there would be a change me posting only lilac ideas this summer

So, today we are going to enjoy this Blueberry Oatmeal with Lilac Syrup. It is quite similar to this Coconut Blueberry Oatmeal (But even easier). However, you will need to make this Lilac Syrup. Thus, I encourage you to make a large batch (If lilacs are still blooming) because, trust me, you will want to have it. If not – you can always use it for fancy cocktails :)
Blueberry Oatmeal with Lilac Syrup
This Blueberry Oatmeal with Lilac Syrup requires only a few ingredients such as oats, lilac syrup, blueberries, and salt. Normally, I use water for my oatmeal, but you can swap for milk or coconut milk, for a more decadent version.
Also, this oatmeal is subtly sweet, with a light botanical flavour. Of course, that depends on how much of the syrup would you use. Feel free to adjust to your level of sweetness, adding more or less of the syrup.

Blueberry Oatmeal with Lilac Syrup

Ingredients
1/2 cup rolled oats (~5 minutes cooking time)
1 cup water
1/2 cup fresh blueberries (divided – reserve some to garnish)
pinch of salt
Lilac syrup, to your taste
Directions
- In a small saucepan, bring the water with a pinch of salt to a slow boil.
- Add the oats and cook, occasionally stirring, for one minute over medium heat.
- Add most of the blueberries. Decrease heat and let the oatmeal simmer for another 3 minutes or so – according to the info on the package.
- Off heat. Cover and let it stand for a minute or two. Serve immediately topped with the reserved blueberries and 1-2 tsp. of the lilac syrup.
