Ingredients

  • 3 and 1/2 cups (350 g.) pecan halves

  • 4 tbsp. (1/4 cup or 60 g.) unsalted butter, divided

  • 2/3 cup (200 g) thick dulce de leche, ideally produced in South America

  • a good pinch of salt

  • 1 tsp. (5.5. ml.) vanilla extract

  • Equipment:
  • heavy bottom frying or sauté pan

  • spatula

  • baking tray

Directions

  • Place the pecans in a pan and toast them over medium-low heat (i.e., 2.5 or 3 out 10), tossing occasionally, for about 10-12 minutes, until fragrant and lightly toasted.
  • Add 3 tbsp. (45 g) of butter to the pan and let it melt for a minute, tossing (be careful as it will be sizzling.)
  • Add the dulce de leche and a good pinch of salt. Let it melt for about 1 minute.
  • Increase heat to medium (4 or 5 out of 10). Cook the nuts, constantly stirring with a spatula, until the caramel thickens and looks a bit coagulated, for about 4 to 5 minutes. Be sure to keep an eye on the pan all the time, as at this point the caramel mixture could start sticking to the bottom of the pan; you may need to decrease heat a bit if it’s bubbling too much.
  • Lastly, stir in the vanilla extract and remaining tablespoon (15 g.) of butter, cook for another minute or so.
  • Transfer the nuts onto a parchment or foil-lined tray and spread them into a thin layer. Let the nuts cool and set, about 30 minutes. Brake into smaller pieces and enjoy!
