But first let me ask you one thing. Where did the time go?! It’s almost end of August. Seriously?! I know that’s a rhetorical question, so I do not expect an answer from you.
While I am a little tired of summer heat (And I also love early fall – perhaps my favourite time of the year), I’m so not ready for autumn recipes. And indeed, if you have known me for a while, you’re probably aware that I am against apple and pumpkin recipes before Fall Equinox. That being said, I am going to share as many summer recipes as I could for another four weeks or so.
Lemon Chive Butter
You can enjoy this Lemon Chive Butter, in fact, all year round. You will need only three (or four) ingredients you can find any time of the year. Butter, either salted or not, lemon, chives, and salt (if necessary). If it’s the season of chive blossoms, you can use them as well. I would recommend using unsalted butter so you would be able to control the saltiness, but salted one would also work.
The recipe is ridiculously easy, and it basically requires mixing up the soften butter with the aromatics. If you want to accelerate the process, you can soften the butter in a microwave – just use 2 or 3 short (10-15 seconds) intervals. Normally, you would shape the infused butter into a log or even individual servings. But I thought what’s the point to spend extra time when you can simply transfer it to a bowl and let it set. Whatever way you choose, you will be impressed with the result!
Please keep in mind once refrigerated, it hardens a lot, so you would need to remove it from the fridge 20-30 minutes prior to serving. Or – again – you can place in in a microwave for 10-15 seconds or so.
You can serve this butter to enhance the flavour for meats, vegetables, and savoury baked goods. Think of serving it with your stake, corn cob, chicken, or garlic fingers. You simply enjoy with crusty bread! If you like compound butter, please also check this Chive Blossom Butter.

I love flavoured butters! I tried growing chives but my puppy dug them all up. I am waiting for her to outgrow that so I can plant more.
What a great use of those chive blossoms! I do really enjoy compound butters…they are so easy to make, but they make everything instantly fancy! I’m pretty sure I could make a meal out of a good baguette and this butter!
