Ingredients

  • Pistachio Mint Pesto:
  • one large handful of fresh mint (Preferably delicate kind such as chocolate mint)

  • about 2/3 cup salted pistachios

  • a pinch of salt (Optional, skip if using salted pistachios)

  • 1 tsp. honey (optional)

  • 2-3 tbsp. olive oil

  • a little bit of water, as needed

  • Watermelon Salad with Pistachio Mint Pesto:
  • 4 cups chilled watermelon (small chunks, cubes, or balls)

  • a handful of arugula

  • extra pistachios, optional

Directions

  • In a blender / processor combine the mint, pistachios, olive oil, honey (if using), salt (if using unsalted pistachios), and a bit water (Start with 2-3 tbsp.) Pulse several times. Scrape down the sides of the food processor with a rubber spatula. Keep pulsing the blender for about 30-40 seconds, adding more water if necessary to achieve the desired consistency.
  • Combine the watermelon chunks and arugula. You can combine the salad with pesto sauce to coat or serve it separately (Although first way would resulted in a well-distributed flavour.) Enjoy right away or refrigerate for for hours.
