Chive Sour Cream Dip
As I said, it’s so easy to make this Chive Sour Cream Dip. You will need to simply combine a few ingredients (Okay, some chopping and mincing is also involved), and that’s it.
For this recipe I used sour cream, cream cheese, chives, garlic, salt & pepper, and a little of lemon juice. I recommend using fat sour-cream (18% or so would be ideal.) You can use low-fat sour cream too, but the dip will turn thinner. Also, I used some cream cheese – mostly to make it even thicker – but that’s optional. If your sour cream is super thick and rich, obviously you can omit the cream cheese. On the other hand, the addition of cream cheese would be handy if your sour cream is relatively thin (10% and less); it will thicken up the dip.
When I was making this dip, our chives weren’t blooming yet. Otherwise, I could have used chive blossoms as well. If you have some, I would encourage you. They are perfectly edible and tasty.
Serving Suggestions
The ways to use this dip are endless! Think of grilled vegetables, meat, and fish. In my book, it wonderfully goes with potatoes. It would work as a salad dressing or side, too. And you can simply enjoy it with some bread and crackers!

Ingredients
1 and 1/2 cup fat sour cream (Preferably 18%)
1/4 cup cream cheese – you can omit if your sour cream is super thick and rich
about 1/4 cup chopped chives
1 small garlic, finely minced
salt & pepper, to taste
1/2 tsp. of lime or lemon juice (or to taste), optional
Directions
- Using an immersion or regular blender, combine the sour cream, cream cheese, garlic, lemon juice (if using), and salt & pepper (to taste); blend for 30-40 seconds until smooth and well-combined. Try and adjust the seasoning (salt, pepper, lemon juice) if desired. Stir in the chopped chives and mix to combine. Enjoy with grilled vegetables, meat, fish, as a salad dressing or simply with bread or crackers. The leftovers will be fine refrigerated for up to 3 days, but I would suggest to consume it with within one or two because dished with chives start having a little strange aftertaste. Enjoy!

I really want to give this a try! One of my “guilty” pleasures dating back to my childhood is onion dip. But this takes it to a whole ‘nother level. Not to mention it being so much “cleaner” and healthier made from fresh ingredients!

Chives need to be used more often! I love ’em. This dip sounds fantastic, and I’m thinking a batch of homemade potato chips would be the way to go here…or crackers. Crackers would be good, too. Perfect appetizer for hanging out with friends!!
