Hey, folks – I hope you all are doing well!

This is one of those back-pocket dips I keep coming back to when chives are in season and I want something quick, fresh, and reliable. It comes together in no time, keeps beautifully creamy, and pairs with just about everything. So, let’s dive into this Chive Sour Cream Dip.

Why You’ll Love This Chive Sour Cream Dip

  • Creamy and fresh. Rich sour cream balanced with bright chives and a hint of garlic.
  • Quick to make. A blender does all the work in under a minute.
  • Versatile. Works as a dip, spread, or even a quick sauce.
  • Customizable. Adjust thickness, acidity, and seasoning to taste.
  • Seasonal and simple. Perfect when fresh chives are abundant.

Flavour and Texture Profile

This dip is smooth, creamy, and gently tangy, with a fresh onion-like bite from the chives and subtle warmth from the garlic. The optional citrus adds brightness without overpowering the dairy base, while the texture stays thick yet spoonable – ideal for dipping or spreading.

Ingredients You’ll Need for This Chive Sour Cream Dip

  • Sour cream. Full-fat sour cream (around 18%) creates a rich, creamy base with a pleasant tang that keeps the dip smooth and balanced.
  • Cream cheese. Adds extra body and silkiness; you can omit it if your sour cream is already very thick and rich.
  • Fresh chives. Mild, oniony, and fresh, chives give this dip its signature flavour without overpowering it.
  • Garlic. Just a small amount adds depth and savoury warmth; finely mince it so it blends smoothly.
  • Lime or lemon juice (optional). A small splash brightens the dip and adds a subtle citrus lift.
  • Salt and black pepper. Essential for rounding out the flavours and enhancing the freshness of the chives.

How to Make Chive Sour Cream Dip

To make this Chive Sour Cream Dip, combine the sour cream, cream cheese, garlic, lemon or lime juice (if using), and salt and pepper in a blender or using an immersion blender. Blend for about 30–40 seconds, until smooth and fully combined.

Taste and adjust the seasoning if needed. Stir in the chopped chives by hand until evenly distributed. Serve right away, or refrigerate briefly to let the flavours meld.

Storage Notes

Store the dip refrigerated in an airtight container for up to 3 days. For the best flavour, enjoy it within 1–2 days, as chives can develop a slightly sharp aftertaste over time.

How to Enjoy This Chive Sour Cream Dip

  • With potatoes. Spoon it over roasted or boiled potatoes, serve it with crispy wedges, or pair it with potato pancakes.
  • Alongside grilled dishes. It’s excellent with grilled vegetables, meat, or fish, adding freshness and creaminess.
  • As a salad dressing. Thin it slightly with a splash of milk or lemon juice and use it as a quick, herby dressing.
  • As a side or spread. Serve it alongside mains or spread it on sandwiches and wraps.
  • For simple snacking. Enjoy it with bread, crackers, or crisp vegetables for an easy appetizer.

  4. I really want to give this a try! One of my “guilty” pleasures dating back to my childhood is onion dip. But this takes it to a whole ‘nother level. Not to mention it being so much “cleaner” and healthier made from fresh ingredients!

  5. Chives need to be used more often! I love ’em. This dip sounds fantastic, and I’m thinking a batch of homemade potato chips would be the way to go here…or crackers. Crackers would be good, too. Perfect appetizer for hanging out with friends!!

  6. I don’t care about the crackers…just pass me a big tablespoon and I want to dig right in! It looks so GOOD, Ben.

  7. Those chives will definitely add tons of flavours to that dip. Love it

  8. Yum! This dip looks amazing Ben! Sour cream and chives is such a great combo. I love the addition of cream cheese. Fantastic idea to use this dip on potatoes or grilled veggies. That sounds like an addicting combo!
