Hello, folks! I hope you all had a wonderful weekend – and that many of you in Canada and the US are having a great long weekend. Wishing you an amazing Labour Day!

Also, can you believe it’s the end of August today – and the unofficial end of summer? I cannot, really. However, I know that I still want to share a few more lovely summer cocktails with you before fall arrives. So, without further ado, let’s dive into another lavender (shocking, I know – I haven’t posted lavender recipes for a while) cocktail. Lavender Lychee Cocktail, anyone?

Why You Love This Gin Cocktail with Lychees and Lavender

Lavender and lychee pair beautifully, with lavender’s floral notes complementing lychee’s sweet, tropical aroma for a refreshing and elegant drink.

  • It is sweet, yet very fresh and luscious.
  • Lychee’s sweet, tropical, and slightly floral flavour pairs well with lavender’s floral notes, which can hint at honey and citrus. Both flavours complement Gordon’s Pink gin, known for its juicy notes of strawberry, raspberry, and redcurrant.
  • This combination creates a bouquet that is calming yet invigorating.

Ingredients You Will Need for Lavender Lychee Cocktail

This Lavender Lychee Cocktail was inspired by my fellow food blogger, Michelle (from Sift and Simmer), who posted a recipe for Homemade Lychee Syrup several years ago, which sounded incredibly exciting. First, I made this Lychee Mojito Cocktail Recipe. Then I decided to turn the lychee syrup into lavender lychee syrup.

To make this cocktail, you will need the following ingredients:

  • Gin – the base spirit of the cocktail. I used the combination of Gordon’s Premium Pink and Empress 1908 Indigo Gin, but you can use your favourite gin. I recommend going with fruity, less juniper-forward gins.
  • Lavender Lychee syrup – works as a sweetener and modifier. To make the syrup, you will need:
    • Fresh or canned lychees
    • Dried lavender buds – be sure to use culinary-grade lavender.
    • Sugar
    • Water
  • Lemon juice – adds freshness and balances the sweetness.

Lavender Lychee Cocktail

Ingredients

  • Lavender Lychee Syrup:
  • 1/2 cup (125 ml.) water

  • 1/2 cup (100 g.)  granulated sugar

  • 12 fresh lychees, peeled
    you can use canned

  • 1/2 tsp. (2.8 g) dried lavender buds

  • Lavender Lychee Cocktail:
  • 1 oz. (30 ml) Gordon’s Pink gin

  • 1/2 oz. (15 ml) Empress 1908 Indigo gin

  • 1 to 1 1/2 oz. (30-45 ml) Lavender Lychee syrup

  • 1 oz. (30 ml) fresh lemon juice

  • ice cubes, for chilling/serving

  • lychee, lemon wedges and zest, lavender sprig – for garnish

Directions

  • Lavender Lychee Syrup:
  • To make the syrup, add the water, dried lavender buds, and sugar to a small saucepan. Heat over medium heat and bring the mixture to a simmer.
  • Add in the lychees and give it a stir, pressing lightly on the fruit. Let the syrup reduce and thicken, stirring occasionally, for about 10 minutes. Off heat.
  • Pour the syrup along with the lychees into a jar, and let cool. Once cool, place the syrup into the fridge for one hour to let the flavour from the lychees develop further. After chilling, pass the syrup through a fine mesh sieve to remove the lavender. Any leftovers will stay fresh refrigerated for up to one week.
  • Lavender Lychee Cocktail:
  • In a shaker, combine the gin, syrup, lemon juice, and ice and shake vigorously for about 20-30 seconds. (See note). Try adjusting the flavour by adding more syrup or lemon juice, if desired. Filter for a stronger version or serve on the rocks, over fresh ice. Garnish as desired. Enjoy!

Notes

  • If you are using two gins, including Empress 1908 Indigo gin, for a beautiful presentation and ombre effect, you can mix all the ingredients except the Empress 1908 gin and add it to the glass already prepared.
