
This Irish Cream Iced Coffee is made with freshly brewed coffee mixed with Baileys liqueur and vanilla ice cream. It is such a simple yet luscious summer treat!

Hello, folks! How are you doing? I hope you are having a good week. I also hope you enjoy the nice weather, too.
Speaking of the weather, it had been fresh and rainy for a while here in Nova Scotia, Canada. But in one day, the temperature jumped by more than 10 degrees (typical Canadian weather.) So, I decided it was time to share a recipe for refreshing iced coffee. Or, even better – this Baileys Irish Cream Iced Coffee!

Baileys Irish Cream Iced Coffee
When it comes to iced coffee, I prefer drinks that are either unsweetened (or only lightly sweetened) or mixed with ice cream. Typically, I am not a huge fan of coffee sweetened with a ton of syrup. But ice cream is a different story. I mean, who can say “no” to the combination of coffee and ice cream?
This recipe calls only for three ingredients.
- Freshly brewed coffee of your choice.
- Vanilla ice cream
- Irish Cream. I used the Baileys brand, the original flavour, but any other similar cream liqueur brands will do.
- While optional, you can go the extra mile and garnish your drink with some whipped cream and shaved chocolate. Why not?!
Flavour Profile and Variations
This iced coffee is irresistibly smooth, rich, and decadent.
It’s sweet, but it’s not as sweet as most iced coffee items you can get in a coffee shop. Obviously, the sugar content of your ice cream and an amount of liquor will also determine the taste and sweetness.
And, as always, you can play with the flavour. First, you can go ahead and pick one of the many Baileys flavours. Think of salted caramel, tiramisu, espresso, mint chocolate, or whatever you fancy. As I mentioned, you can pick other liqueurs rather than Baileys, and the options are endless. For example, I could imagine this with Canadian-style cream liqueur made with maple syrup.
You can also play with ice cream flavours. Chocolate, caramel, and dulce de leche will work wonderfully.

I’m with you on the coffee + syrup. I only use a tiny splash of cream in my coffee. But ice cream? That’s a different story! What a great flavor combination here. This could very well serve as dessert on a warm summer evening…and I would love it!
