Hey folks – how are you doing? I hope you all had a nice restful weekend, and you are enjoying this new week. (On a side note, we had daylight light change, and I always feel like a zombie for a few days, until the brain gets adjusted to a new reality. Grrr, I hope Canada abandons this practice for good soon.)

Anyway, I realized that St. Patrick’s day is around the corner – and I did not prepare anything special this year! However, I have found a few unpublished recipes containing Irish cream, so I thought it would be the right time to publish one of it.

Irish Cream Oatmeal

As you may suggest from these pictures, I made this Irish Cream Oatmeal last summer.

Now, don’t you think that this oatmeal sounds amazing? And I will not lie – it tastes fabulous, too.

This is an utterly decadent oatmeal breakfast for those days you need to indulge yourself. While it brings healthy benefits of oats, the addition of Irish cream and dark chocolate elevates it to a different level. If you google oatmeal recipes with Irish cream, you will find that most would call just for a little drizzle over your regular oatmeal. This is not the case here. This recipe calls for a very generous amount of Irish cream. Does it make oatmeal less healthy? It certainly does! Does it make it irresistibly rich and delicious? Yes, absolutely!

I believe you will not get super drunk after enjoying the oatmeal because Irish cream is added and cooked with other ingredients for a few minutes. Despite the short cooking time, some of the alcohol will evaporate (burn down.) Still, I would not recommend enjoying this right before a drive. After all, this more like a weekend / holiday-deal recipe. You can always decrease the amount of Irish cream by substituting more water (or milk.) The flavour, however, will be more subtle but still present.

For this recipe you can use any Irish cream brand of your choice. In fact, you can go with some flavour options such as espresso, chocolate, salted caramel, etc.

This Irish Cream Oatmeal combines healthy benefits of oats and indulgent and rich flavour and consistency due to the addition of Irish cream and dark chocolate.

Ingredients

  • 1 cup (ab. 90 gr.) rolled oats (5-7 minutes cooking time)

  • 1 cup (240 ml.) (to 1 and 1/2 cup) of water (or milk or the combination of both) – see notes

  • 1/2 cup (ab. 100 ml.) Irish cream of your choice; plus more, if desired

  • 1 tsp. vanilla extract

  • a pinch of salt

  • 1/2 to 1 tbsp. (7-14 gr.) butter, optional

  • dark chocolate, shaved, for serving, optional

Directions

  • In a small saucepan, bring the water (or milk, if using), Irish cream, and a pinch of salt to a slow boil.
  • Add the oats and cook, occasionally stirring, for about 4-5 minutes depending on the package instructions (I prefer to simmer it 30-60 seconds) over medium heat. Adjust the consistency by adding more liquid, if necessary.
  • Off heat. Stir in the vanilla. If desired, add one tsp. of butter. Cover and let it stand for a minute or two. Then fluff it up a bit and serve, sprinkled with dark chocolate cravings, if desired – and may be even an extra drizzle of Irish cream. Enjoy!

Notes

  • The standard ratio is roughly 1:2 (oats to liquid), resulting in quite thin porridge. Personally, I love to use less liquid for an extra thick consistency. I would suggest starting with 1 and 1/2 cup of liquids (1 cup of water and 1/2 cup of Irish cream) and then add some more liquid, if necessary for a desired consistency.

    this sounds really delicious Ben. I love porridge, and I usually add maple syrup and nuts and almond milk to it. Irish cream sounds like a winner!
