This Gin Limoncello Raspberry Fizz (with Empress 1908 Indigo Gin) is a luscious, light, fruity, and refreshing cocktail perfect for a hot summer day.
Hello, folks! How are you doing? I hope you had a great start to this new week. For my Canadian readers, I hope you enjoy a wonderful Canada Day on Tuesday. And for my American readers, I hope you have a great Fourth of July Day this week, too.
As you can see, there are so many good reasons to enjoy a cocktail (or few) this week. Luckily, I have another tasty recipe to share with you today. Please welcome this Gin Limoncello Raspberry Fizz (with Empress 1908 Indigo Gin) – a perfect summer concoction.
What is Empress 1908 Indigo Gin?
Empress 1908 Indigo Gin is liquor (disclaimer: not sponsored) produced in Canada by Victoria Distillers and inspired by the legendary Fairmont Empress Hotel in Victoria, British Columbia.
This gin has a pleasant and complex (I would describe it as both classic and modern) botanical flavour, including the one coming from Juniper berries, black tea, grapefruit peel, and rose petals. The flavour profile is both earthy and fresh, citrusy, and floral.
It also includes Butterfly pea blossoms that give this gin its distinct indigo colour and which changes its shade depending on the pairing. The hues (i.e., different shades of purple and pink, ranging from light lavender to vibrant fuchsia) vary depending on the pairing ingredients. It works particularly well when mixing with citrus juices and liquors. And it pairs wonderfully with botanical flavours like lavender, elderflower, and rose, too.
If you have never had this gin, I encourage you to give it a try. If not available, as an alternative, you can use any other gin with a delicate botanical flavour instead.
There are other flavours produced by the same distillery company such as elderflower and rose, cucumber and lemon, and oaken gin, but unfortunately, they are not available here in Nova Scotia.
Gin Limoncello Raspberry Fizz
If you love those cocktails that are bright, citrusy, fresh, and fruity, you will love this Gin Limoncello Raspberry Fizz. It’s perfect to enjoy on a hot summer day – just like a mojito.
It’s sweet and sour at the same time. No worries, though – it’s not overly sweet, a dessert-like cocktail, either.
And it has a character, thanks to the use of Empress Gin, too.
Ingredients You’ll Need for Gin Limoncello Raspberry Fizz
To make this Gin Limoncello Raspberry Fizz, you will need the following ingredients:
- Empress 1908 Indigo Gin – works as the base spirit. The gin’s distinct flavour profile includes botanicals such as black tea, Butterfly pea blossoms, juniper berries, grapefruit peel, and rose petals. Indigo gin has a pleasant herbal earthy aroma with a hint of citrus. Any other gin in place of Empress 1908 Indigo works well in this cocktail – with the major difference being the purple hues, which are not too visible in the first place anyway. If you use other gin, I’d recommend going with a less juniper-forward spirit for a more delicate experience.
- You can play with gin’s flavours, i.e., using the one with prominent fruity profile. As I mentioned before, the same Victoria Distillers has Empress Elderflower & Rose Gin and Cucumber Lemon Gin. While I have not tried it myself, I can imagine they would work nicely in this recipe.
- Limoncello – also works as both a modifier and sweetener. It also makes the flavour profile more complex, adding sweetness, tartness, and even a subtle bitterness.
- Rose Syrup works as a modifier and sweetener. It also gives the cocktail a beautiful and dramatic colour. If fresh rose petals are not available to make this syrup, dried roses could be an option, although they tend to be less fragrant.
- And if you don’t have dried rose petals either, you can make a simple sugar syrup infused with a few drops of rose water (not essence). Furthermore, you can completely avoid the syrup part and simply add a few drops of rose water. This option will be perfect for those who prefer less sweet cocktails (Limoncello is already quite sweet.)
- Fresh Raspberries – for added flavour and freshness.
- Lemon Juice – balances out the sweetness of Limoncello and rose syrup, as well as modifies the colour of Empress 1908 Indigo gin (which, given the complex profile of ingredients, will not be too visible).
- Club Soda or Sparkling Water, unsweetened. If you don’t like bubbles, you can top it with regular water, but I guess, that won’t be a fizz anymore.
- Ice Cubes – for serving.
- Lemon Wedges, Fresh Raspberries, and Mint – for garnish, optional.

Funny that you mention both gin and limoncello here as we got new bottles of each this past week. Now all I need to do is pick up some raspberries, and we’ll have cocktail hour all set! Happy (belated) Canada Day!
Another beautiful cocktail! Pink ones are my favorite.
What a refreshing cocktail with lovely color from the raspberries! Happy Canada Day!
The Gin Limoncello Raspberry Fizz sounds amazing with the rose syrup which I love. But Ben, that photo presentation is beyond beautiful. I’m in awe.
Thank you Judee!
Another delightful sounding cocktail!
