Finally, after some needed break, this is my first recipe of 2024. And of course, it is healthy. Or relatively healthy (two cups of cheese is a healthy amount, right? :)
Perhaps, we all enjoyed a lot of festive and decadent food in December. So, January and February are perfect months to focus more on light and healthy recipes like soup and salads. Besides, it’s winter which means soup season. Indeed, we enjoy soup almost every day September through and or May. And then chilled soup in summer.
Broccoli Cheese Soup
This Broccoli Cheese Soup is ridiculously easy to make, and it will require from you about 25 to 30 minutes to start to finish. Basically, you will need to bring your broth or water to a boil and cook broccoli florets along with other ingredients until they are soft (12-15 minutes or so.) Then you will need to stir in the shredded cheese and purée the soup using a regular or immersion blender.
Broccoli soup can be quite bland, but that is not the case here. The addition of aromatic fresh thyme, smoked paprika, and chipotle makes the difference while the generous amount of cheese enhances both the texture and flavour profile. You can use any hard cheese of your choice, preferably with some prominent nice flavour. I used here smoked cheddar, and the result was terrific!
And while it is totally optional, I would suggest serving it with some extra shredded cheese and bread of your choice. After all, we cannot allow this soup to be overly healthy, right? :)

Broccoli Cheese Soup

Ingredients
1 tbsp. olive oil
1 large onion, sliced
2-3 garlic cloves, minced
8 cups (~600 gr.) broccoli florets, frozen of fresh
5 cups of light broth of your choice or water
2 cups (200 gr.) shredded hard cheese of your choice – cheddar, Gouda or Swiss all are good options; you can also use smoked cheese + more for serving, optional
1 tbsp. fresh thyme
1 tsp. smoked paprika
1/2 tsp. chipotle powder
2/3 – 1 tsp. salt
Directions
- In a large pot, heat the olive oil over medium heat and sauté the onions and garlic until tender, about 5 to 7 minutes.
- Pour in the broth and broccoli (if you are using frozen broccoli, there’s no need to thaw them; just the cooking time will slightly increase as the frozen broccoli will cool down the water), and season with the thyme, smoked paprika, chipotle, and salt to taste.
- Bring to a simmer, cover, then reduce heat to medium-low. Simmer until broccoli is tender about 7 to 10 minutes; frozen broccoli may need up to 15 minutes.
- Once broccoli is tender remove soup from heat and stir in the shredded cheese, stirring with a spatula or wooden spoon to melt. Let it cool a bit until easy to handle.
- Using a regular or immersion blender, process until smooth. If the soup is too thick to your liking, add a little of hot water or broth. Try and adjust the seasoning if necessary. When serving, sprinkle with extra cheese and fresh herbs, if desired. Enjoy!

We are definitely in the middle of soup season here, and this sounds like a delicious way to mix things up! The smoky version with the smoked cheddar, smoked paprika and chipotle is right up my alley – it’ll remind me of summer grilling…but during these cold winter days!
